Luckily for all of us, I asked my dietitian, nutritionist, and healthy food blogger friends & colleagues to share their favorite “tried and true” healthy gluten-free vegetarian recipes with me, so I could share them with YOU!

Nutrition Notes: All recipes are naturally gluten-free unless otherwise noted, and I have added gluten-free substitutions. Many recipes are vegan and dairy-free, or can easily be made vegan by omitting dairy/honey/etc.

For added protein and fiber in pasta dishes, try some of my favorite garbanzo, bean, or lentil-based pastas, such as Banza and Tolerant Foods. Capello’sĀ Almond Flour Pasta is a delicious grain-free pasta, or have fun experimenting with veggie noodles or “zoodles” for lower-carb/lower-calorie options.

  1. Meatless Monday is a great way to incorporate plant-based proteins into your diet! I love this list of diverse recipes–everyone is sure to find at least one meal they would be interested in trying! Just one serving of plant-based protein per week can reduce the risk of cancers, heart disease, diabetes, and obesity. Plant-based proteins (including beans, nuts, lentils, tempeh) are also great sources of fiber and potassium which are lacking in a typical American diet. Not only are they lower in fat and cholesterol compared to other sources of protein, plant-based proteins are extremely cost-effective. Beans and lentils are cheap, easy to prepare, and can be used in a variety of cuisines–which you’ve displayed with the many recipes in this post! Another great benefit of Meatless Monday is the positive impact on the environment–going meatless for just one day a week can reduce greenhouse gas emissions.     1. Thanks so much Deanna-I can’t wait to make a gluten-free version of your Lasagna Kale Roll-Ups! For GF pasta, my “go-to” brand is Ancient Harvest Corn Quinoa blend, and I also like Jovial foods brown rice pastas too, but, lately, I’ve really been in to the chickpea/lentil based pastas from Banza and Intolerant Foods. I’m always amazed how filling & nutritious they are šŸ™‚
