No matter whether you’re already following a vegan, or vegetarian diet, or you’re a flexitarian, or omnivore looking to add more plant based recipes to your diet, whatever healthy vegetarian recipes you choose to make, not only should they nourish your body, but they should also taste delicious too!

Luckily, for all of us, I asked my dietitian nutritionist and healthy food blogger friends & colleagues to share their favorite “tried and true” healthy gluten free vegetarian recipes with me, so I could share them with YOU!

Not only will you love the health benefits of these delicious plant based recipes, but also the cost savings of {cutting back on meat} as well. Enjoy!

Nutrition Notes: All recipes are naturally gluten-free unless otherwise noted, then I have added gluten-free substitutions. Many recipes are vegan, or can easily be made vegan by omitting dairy/honey/etc., and several recipes are grain-free as well.

For added protein and fiber in pasta dishes, try some of my favorite garbanzo, bean, or lentil based pastas such as Banza, Tolerant Foods, and Explore Asian. Capello’s Almond Flour Pasta is a delicious grain-free pasta, or have fun experimenting with veggie noodles, or “zoodles” for lower carb/lower calorie options.

THANK YOU SO MUCH TO ALL MY TALENTED & INSPIRATIONAL RECIPE & PHOTO CONTRIBUTORS WHO HELP ME SPREAD THE WORD THAT HEALTHY IS DELICIOUS!

Serving Suggestions: One of the great things about meatless/vegetarian recipes is that a lot of these dishes make delicious “one bowl”, “one pot”, or “one pan” meals. Hello, less dishes to wash!! But, if you would like to add a side dish, many of these recipes pair up deliciously w/ a side salad, fresh fruit, and perhaps some crusty bread, or my “Best Ever” Rolls {Pao de Quejo}.

I’d love hearing from you, so leave a comment, share a tip, or ask a question! And, if you think your friends would enjoy this post, I’d truly appreciate you sharing it with them too!

Do you follow Meatless Monday? What are your favorite “go to” healthy gluten free vegetarian recipes? Please share!

  1. Meatless Monday is a great way to incorporate plant-based proteins into your diet! I love this list of diverse recipes–everyone is sure to find at least one meal they would be interested in trying! Just one serving of plant-based protein per week can reduce the risk of cancers, heart disease, diabetes, and obesity. Plant-based proteins (including beans, nuts, lentils, tempeh) are also great sources of fiber and potassium which are lacking in a typical American diet. Not only are they lower in fat and cholesterol compared to other sources of protein, plant-based proteins are extremely cost-effective. Beans and lentils are cheap, easy to prepare, and can be used in a variety of cuisines–which you’ve displayed with the many recipes in this post! Another great benefit of Meatless Monday is the positive impact on the environment–going meatless for just one day a week can reduce greenhouse gas emissions. 1. Thank you so much Amanda for your kind words and thoughtful response! I’m so glad you enjoyed the post, and you list so many great reasons to encourage folks to jump on the Meatless Monday {or more meatless days!} bandwagon. Great article that you shared too-Sharon Palmer is a fabulous resource for plant based nutrition. Cheers!

  2. What an amazingly delicious and nutritious round-up!! I have to check out so many of these but first things first, I’m heading over to see your Pao de Quejo recipe! My husband, daughter and I love, love, love them but I’ve never tried making them at home 🙂

  3. What a brill and clever round-up post. SO much to peruse and pin! Thanks for taking the time to put this together. I am terrible at such posts but I sure appreciate it when others take the time to compose and research them. Your tips at the top are succinct and very helpful too. 🙂

    1. Thanks so much Deanna-I can’t wait to make a gluten-free version of your Lasagna Kale Roll-Ups! For GF pasta, my “go-to” brand is Ancient Harvest Corn Quinoa blend, and I also like Jovial foods brown rice pastas too, but, lately, I’ve really been in to the chickpea/lentil based pastas from Banza and Intolerant Foods. I’m always amazed how filling & nutritious they are 🙂
