For added protein and fiber in pasta dishes, try some of my favorite garbanzo, bean, or lentil-based pastas, such as Banza and Tolerant Foods. Meatless Monday is a great way to incorporate plant-based proteins into your diet! I love this list of diverse recipes–everyone is sure to find at least one meal they would be interested in trying! Just one serving of plant-based protein per week can reduce the risk of cancers, heart disease, diabetes, and obesity. Plant-based proteins (including beans, nuts, lentils, tempeh) are also great sources of fiber and potassium which are lacking in a typical American diet. Not only are they lower in fat and cholesterol compared to other sources of protein, plant-based proteins are extremely cost-effective. Beans and lentils are cheap, easy to prepare, and can be used in a variety of cuisines–which you’ve displayed with the many recipes in this post! Another great benefit of Meatless Monday is the positive impact on the environment–going meatless for just one day a week can reduce greenhouse gas emissions. Here’s some helpful information to help encourage Meatless Monday: http://www.todaysdietitian.com/newarchives/010713p38.shtml
Thank you so much Amanda for your kind words and thoughtful response! I’m so glad you enjoyed the post, and you list so many great reasons to encourage folks to jump on the Meatless Monday {or more meatless days!} bandwagon. Great article that you shared too-Sharon Palmer is a fabulous resource for plant based nutrition. Cheers!
wGreat round-up! Thanks for including my recipe. š
I’m not even a vegetarian but I’ve been looking to get a lot more veggies in my diet lately, so this list is just what I needed! š
What an amazingly delicious and nutritious round-up!! I have to check out so many of these but first things first, I’m heading over to see your Pao de Quejo recipe! My husband, daughter and I love, love, love them but I’ve never tried making them at home š
What a brill and clever round-up post. SO much to peruse and pin! Thanks for taking the time to put this together. I am terrible at such posts but I sure appreciate it when others take the time to compose and research them. Your tips at the top are succinct and very helpful too. š
Amazing roundup EA! I think I need a whole year to try every recipe here out! Pinning all these ASAP!

This is AWESOME -can’t pin it fast enough! Thanks for the inspiration (and for including my lasgana rolls – what’s your favorite brand of gluten-free pasta?)
Thanks so much Deanna-I can’t wait to make a gluten-free version of your Lasagna Kale Roll-Ups! For GF pasta, my “go-to” brand is Ancient Harvest Corn Quinoa blend, and I also like Jovial foods brown rice pastas too, but, lately, I’ve really been in to the chickpea/lentil based pastas from Banza and Intolerant Foods. I’m always amazed how filling & nutritious they are š
Thanks EA for including Shaw’s Simple Swaps- what a great roundup! š
Thanks Liz! I can’t wait to make your Paella-or maybe you can make it for our photo shoot.. š
