I was SO hoping for leftovers of these Crunchy Lentil Tacos.

But my family disappointed me, and gobbled them all up.

Not one. little. speck. of lentil taco “meat” or feta guacamole left.

Not even a nibble for a mouse.

They were that good.

And you know what was even better than the fact that SiSi, my 14 yo “on again, off again vegetarian” daughter, Big Tex, my 12 yo “meat lovin” Texas boy, and Mr. Spicy, the other meat lovin’ male in my life inhaled these super duper healthy lentil tacos without a single, solitary complaint?

They are SO easy to make!

Crunchy Lentil Tacos w/ Avocado Feta Guacamole

Ingredients

  • 1 tablespoon avocado oil, or other high-oleic vegetable oil
  • 2 1/2 cups pre-cooked lentils {i.e. Trader Joe’s Ready-to-Eat Steamed Lentils}
  • 1 small sweet onion, finely chopped, and divided
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon salt, or to taste
  • 1/4 cup water
  • 3 small avocados or 2 medium to large avocados
  • 1 cup crumbled feta cheese
  • 8-12 crunchy taco shells
  • Optional, for serving: Chopped lettuce, chopped tomato, cilantro, hot sauce

Instructions

  • Heat a large skillet over medium heat, then add oil and 1/2 of the chopped onion {~ 1/2 cup} to the pan, stirring until onion is softened, ~ 2 minutes. Add cooked lentils to the pan and stir, then add cumin, chili powder, salt, pepper, and water to lentil/onion mixture, and stir well to combine. Turn heat down to low to simmer while preparing the avocado feta guacamole.
  • Remove skin and pit from avocados and place them in a medium sized mixing bowl. Mash avocados with a fork, then add remaining chopped onion and feta cheese, stirring well to combine.
  • Spoon lentil “meat” mixture in to a serving bowl, and place it on the table along with the taco shells, avocado feta guacamole, and desired taco fixins’ so everyone can serve themselves “Taco Bar Style”.

Notes

  1. Packed with protein, fiber, and calcium, these Crunchy Lentil Tacos are also a fabulous source of plant based iron, supplying 36% of your recommended daily intake in 3 tacos.
  2. Omit feta cheese for a vegan option.
  3. The nutrition information provided is for 2 or 3 tacos per serving, depending upon how hungry you are. 2 tacos are actually quite filling, but if you’re extra hungry, by all means, have 3. Add a side of fresh fruit, and you have a complete meal!

    When I first saw these tacos I totally thought they were made with ground beef! Love that they are lentils instead! I always do veggie tacos, usually with pinto beans but I will try them this way now! oh I want tacos so bad right now, haha
