Quick and Easy Goat Cheese Pizza with Spinach, Mushrooms, and Onions

Super easy to make and loaded with healthy veggies, this quick and easy Goat Cheese Pizza with Spinach, Mushrooms, and Onions, is one of my favorites for DIY Pizza Night!Quick and Easy Goat Cheese Pizza with Spinach, Mushrooms, and Onions on a Gluten Free Crust. | Healthy Vegetarian RecipeMy mom, the official “Queen of Coupon Clippers” would be very proud of me today.

She clips coupons like it’s nobody’s business, and  keeps me so well-stocked in her “bargins” such as aluminum foil and other kitchen goods, that if you ever need any, please come to my house and take some. Please.

I’m pretty sure I have an almost lifetime supply of Reynolds Wrap!

Getting back to my own bargain though, and this amazing Goat Cheese Pizza….

While I didn’t actually have a coupon today, I did take advantage of a huge sale on Udi’s gluten-free pizza crusts at Sprouts Market in Solana Beach, and managed to save over $7.00 on some of my favorite gluten-free crusts.

If you’re on a gluten free diet, I know you get just how important it is to snag a bargain when you see one!

So I did, and stocked up on 4 packages of crusts, and now have 7 extra crusts chilling in my freezer waiting to be topped with more healthy goodness at a later date.

{Actually, I know I have no right to complain, but I’d like to be chilling in my freezer right now, as we’ve had a bit of a heat wave in San Diego this past week…}

Back to the pizza though…

Even though I haven’t felt much like cooking lately with the heat, 1 of the crusts did manage to make it into the oven, and in to my belly 🙂

Topped with goat cheese, spinach, mushrooms, red onions, garlic, olive oil, and a little mozzarella, this pizza is one of my all time favorites.

This healthy Goat Cheese Pizza w/ Spinach, Mushrooms, and Onions on a gluten-free crust is perfect for DIY pizza night! | Recipe is gluten free and vegetarian.

Word of warning though…

You may want to kiss your sweetie before eating a slice…

The onions and garlic pack a pretty potent punch!

Just sayin’…

  1. I made this the other night for my husband and myself, and we both loved it. Will definitely be making this again!

  2. Hey there just wanted to give you a quick heads up
and let you know a few of the pictures aren’t loading properly.
I’m not sure why but I think its a linking issue.
I’ve tried it in two different internet browsers and both show the same outcome.

  3. After I initially left a comment I appear to have
clicked on the -Notify me when new comments are added- checkbox and now every
time a comment is added I get four emails with the same comment.
Is there a way you can remove me from that service? Cheers!

  4. This is really interesting, You’re a very
skilled blogger. I have joined your feed and look forward to seeking more
of your fantastic post. Also, I’ve shared your web
    site in my social networks!

  5. What’s up it’s me, I am also visiting this web site on a
regular basis, this website is in fact nice and the visitors are genuinely sharing pleasant thoughts.

  6. Ha, that is too funny that we both have pizza on the brain today 🙂 I’ve had that crust and enjoyed it as well! I got mine on sale too LOL Yay for sales! And if you really need to know I have at least 10 foils in my basement pantry too LOL Loving your pizza toppings!!

I started a Gluten Free Blog directory at my site, please come and link yourself if you’d like. Its only a day old so I’d love to get your name towards the top! 🙂

  7. I would LOVE it if Nick would all of a sudden enjoy goat cheese as much as I do. I can never buy it because he hate sit. So putting it on pizza is out of the question. Although, I suppose I could put it on just my half! This looks divine.
I wrote a little “Product of the Week” about the olive oil you use. We just started selling it where I work. It’s a great product.

  8. That pizza looks awesome! I love homemade pizza. One of our plans is to make our own mozzarella (my vegetarian rennet just came in the mail) cheese and do a completely from scratch pizza- dough, sauce and cheese! I love mushrooms on pizza, but my favorite is probably pineapple. I do like to clip coupons and I love a good deal, but sadly, a lot of the coupons we get here are for foods I don’t eat, like sugary cereals, cookies and ice cream. Occasionally there is one for frozen veggies. With a limited selection of food here too it is tough, so I try and go to the websites of foods I buy here and see if I can get coupons for them.

  9. I wonder if we have anything similar over here? We have the ambient ones (they are rubbish) but I’ll need to check the freezer section. And I also just want to say how gorgeous and clear your images are. I don’t know if I’ve told you lately how much I love visiting your site, learning stuff, being inspired and also being ever so slightly envious of your weather (wish I thought I needed to sit in a freezer!) and your photography skills. You can tell you love blogging and helping people.

  10. Oh, yum! i absolutely love goat cheese, especially on pizzas + in pasta dishes, + this pizza looks just wonderful! you just can’t beat a delicious pizza topped with lots of great cheese + veggies for a perfect light dinner!
