My mom, the Queen of Bargains, would be proud of me for making this goat cheese pizza. She clips coupons like it’s nobody’s business and keeps me so well-stocked in aluminum foil and other kitchen goods that if you ever need any, please come to my house and take some. Please.

I’m pretty sure I have an almost lifetime supply of Reynolds Wrap!

Getting back to my own bargain, though, and this amazing Goat Cheese Pizza…

While I didn’t have a coupon today, I took advantage of a huge sale on frozen gluten-free pizza crusts and managed to save over $7.00.

If you’re on a gluten-free diet, I know you understand how important it is to snag a bargain when you see one!

So I did and stocked up on 4 packages of crusts, and now have 7 extra crusts chilling in my freezer, waiting to be topped with more healthy goodness later.

This goat cheese pizza is one of my all-time favorites, topped with goat cheese, spinach, mushrooms, red onions, garlic, olive oil, and a little mozzarella.

Word of warning, though. You may want to kiss your sweetie before eating a slice. The onions and garlic pack a pretty potent punch!

So easy and delicious! This Goat Cheese Pizza w/ Spinach, Mushrooms, and Onions can be ready to pop in the oven in 10 minutes or less!

Super easy to make and loaded with healthy veggies, this quick and easy Goat Cheese Pizza with Spinach, Mushrooms, and Onions, is one of my favorites for DIY Pizza Night!

Ingredients

  • 1 10- inch pizza crust, precooked {I used Udi’s Gluten-Free Crust}
  • 1 teaspoon extra virgin olive oil
  • 1 clove garlic, minced
  • 1/2 cup shredded mozzarella
  • 1 cup fresh baby spinach, chopped
  • 1/2 cup mushrooms, sliced
  • 1/2 cup red onion, sliced
  • 1 ounce goat cheese, crumbled
  • red pepper flakes, optional, to taste

Instructions

  • Preheat oven according to pizza crust directions.
  • Spread olive oil over crust. Top with minced garlic and spread over crust with hands, Top pizza with half of the mozzarella cheese, spinach, onions, and mushrooms, Sprinkle remaining mozzarella cheese and goat cheese on top.
  • Bake for 8-10 minutes directly on rack. Remove from oven to cool for 5-10 minutes, then cut in to 4 slices, and enjoy with red papper flakes if desired.

  15. I would LOVE it if Nick would all of a sudden enjoy goat cheese as much as I do. I can never buy it because he hate sit. So putting it on pizza is out of the question. Although, I suppose I could put it on just my half! This looks divine.

  16. That pizza looks awesome! I love homemade pizza. One of our plans is to make our own mozzarella (my vegetarian rennet just came in the mail) cheese and do a completely from scratch pizza- dough, sauce and cheese! I love mushrooms on pizza, but my favorite is probably pineapple. I do like to clip coupons and I love a good deal, but sadly, a lot of the coupons we get here are for foods I don’t eat, like sugary cereals, cookies and ice cream. Occasionally there is one for frozen veggies. With a limited selection of food here too it is tough, so I try and go to the websites of foods I buy here and see if I can get coupons for them.

And I also just want to say how gorgeous and clear your images are.
