Like these Gluten Free Carrot Cake Muffins {Dairy Free, Low FODMAP} made with the most scrumptious Simply Sesame Vanilla with Almond Bits Spread.
Made with simple ingredients {hulled & roasted sesame seeds, pure cane sugar, sesame powder, and sesame oil} the Pure Roasted Sesame Spread is delicious on it’s own.
Throw in A) Diced Almonds and Vanilla {Simply Sesame Vanilla with Almond Bits} or B) Diced Pistachios and Cardamom {Simply Sesame Pistachio Morsels & Hint of Cardamom} and you have a seriously decadent AND healthy treat.
My first several tastings consisted of eating it straight off the spoon, and, honestly, I would have been 100% happy with that.
BUT.
That surely wouldn’t win me any prizes, now, would it? Ha!
So, armed with enough carrots to feed any army {leftover from my pre- Christmas dinner purchase at Costco}, oat flour {from my mama after she cleaned out her freezer}, a large bag of almond flour {another Costco purchase}, and various other kitchen staples, I set out to make you these muffins.
Because, as I mentioned earlier, not only should we all eat more vegetables and fruits, we should also eat more muffins, especially when they’re as nourishing as these Gluten Free Carrot Cake Muffins with Simply Sesame Vanilla with Almond Bits.

Additional Simply Sesame Vanilla w/ Almond Bits OR Simply Sesame Pistachio Morsels and a hint of Cardamom, optional for serving
Instructions
Preheat oven to 350 degrees F. Place cupcake/muffin liners in a muffin baking pan, and set aside.
Combine almond flour, oat flour, spices, and salt in a large mixing bowl. Stir with a whisk or fork until well combined.
Add egg, Simply Sesame Vanilla with Almond Bits, almond milk, and maple syrup to dry ingredients, and stir well with a fork or hand mixer to combine well. Stir in shredded carrots.
Spoon batter into muffin liners, and bake for 10 minutes. Top with sliced almonds, if using, then bake for an additional 5 minutes, or until muffins are done. Remove muffin pan from oven, and allow to cool for at least 5 minutes. Serve with additional Simply Sesame spread if desired.
Notes
No Simply Sesame Spread? Substitute with tahini and add additional maple syrup to desired sweetness.
