Super moist and delicious, these Healthy Gluten Free Carrot Cake Muffins featuring Simply Sesame Vanilla Almond Spread, are also dairy free, and low in added sugar~perfect for a nourishing treat!
Additional Simply Sesame Vanilla w/ Almond Bits OR Simply Sesame Pistachio Morsels and a hint of Cardamomoptional for serving
Instructions
Preheat oven to 350 degrees F. Place cupcake/muffin liners in a muffin baking pan, and set aside.
Combine almond flour, oat flour, spices, and salt in a large mixing bowl. Stir with a whisk or fork until well combined.
Add egg, Simply Sesame Vanilla with Almond Bits, almond milk, and maple syrup to dry ingredients, and stir well with a fork or hand mixer to combine well. Stir in shredded carrots.
Spoon batter into muffin liners, and bake for 10 minutes. Top with sliced almonds, if using, then bake for an additional 5 minutes, or until muffins are done. Remove muffin pan from oven, and allow to cool for at least 5 minutes. Serve with additional Simply Sesame spread if desired.

No Simply Sesame Spread? Substitute with tahini and add additional maple syrup to desired sweetness.
