Homemade Strawberry Sauce with Lemon and Tarragon is an easy, healthy topping for yogurt, cottage cheese, French toast, waffles, ice cream, and more. The delicious possibilities are endless!

It’s that fabulous time of the year-strawberry season! Living in San Diego, I am fortunate to have access to some of the sweetest, juiciest strawberries around. In fact, my mother-in-law brought some over this past Easter from one of the local farm stands. My family and I pretty much inhaled every single one of them. We were in strawberry heaven!

While my family and I typically enjoy fresh strawberries on their own, this strawberry topping is a perfect way to embrace strawberry season full on!

Simple Ingredients to Make Fresh Strawberry Sauce

  • Sweet Strawberries
  • Coconut Oil
  • Fresh Lemon Juice
  • Maple Syrup
  • Tarragon

Ingredient Swaps & Options

  • Not strawberry season? Make this with frozen strawberries. Or you can make a luscious blueberry, blackberry, or raspberry sauce too.
  • Add in some lemon zest along with the lemon juice. Or add orange juice/zest to your strawberry sauce instead.
  • Swap out the tarragon with fresh mint or basil. Any other herbs you would add?
  • A teaspoon of vanilla extract is an easy way to add a boost of flavor.

How to Make this Easy Strawberry Sauce

STEP 1: Prep your ingredients. Remove stems and slice fresh strawberries. Juice 1/2 of a lemon. Finely chop fresh tarragon. (Tip: I like to add my strawberry tops to a pitcher of water, along with lemon slices and vanilla bean, for a refreshing strawberry infused water)

STEP 2: Melt coconut oil over medium heat in a skillet. Add sliced strawberries, lemon juice, tarragon, and maple syrup to skillet and stir with a wooden spoon or spatula cook until mixture thickens (about 5 minutes)

STEP 3: Remove sauce from pan and serve warm or store in an airtight container in the refrigerator until ready to serve. Optional: For a less chunky strawberry sauce, carefully mash sauce with a potato masher. Or, use an immersion blender to make smooth strawberry sauce.

There are so many delicious ways to enjoy this delicious homemade strawberry sauce recipe. It’s such a versatile sauce! Try it slathered on top of a grilled cheese sandwich-yum!!! Or, any of the other easy options listed below.

  • Plain yogurt or cottage cheese. Use lactose free for a low FODMAP version.
  • Pancakes, waffles, and French Toast
  • Angel Food Cake, Bundt Cake, or Pound Cake. Try it on top of my yummy Gluten Free Bundt Cake with Lemon Glaze & Fresh Berries.
  • Vanilla Ice Cream or Strawberry Cheesecake.
  • Combine this rich strawberry sauce with additional fresh sliced strawberries to make an easy strawberry pie.

Ingredients

  • 1 tablespoon virgin coconut oil
  • 2 cups strawberries, sliced fresh or frozen
  • 1/2 product meyer lemon, Juice
  • 1 tablespoon maple syrup
  • 1 tablespoon tarragon, finely chopped fresh

Instructions

  • Melt coconut oil over medium high heat in a pan. Add sliced strawberries, lemon juice, maple syrup, and tarragon, and stir ingredients together in pan until mixture thickens {about 5 minutes}. Remove sauce from pan and serve warm, or place in refrigerator to chill for serving cold.
