How to Make a Healthy Mug Cake

  1. Place all your ingredients in a microwave safe mug & cook for ~ 2 minutes.
  2. EAT!!!

Chai Apple Pie Healthy Mug Cake

Cake for breakfast! This paleo mug cake with apples and chai spices, is SO easy to make. Serve it with Greek yogurt for a delicious protein packed breakfast or healthy treat!

Ingredients

  • 1 large egg
  • 1 tablespoon expeller pressed high oleic sunflower oil*
  • 2 teaspoons pure maple syrup
  • 1/4 teaspoon pure vanilla extract
  • 1/2 apple with skin, core removed, and finely chopped
  • 3 tablespoons fine almond flour
  • 1 teaspoon psyllium husk powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon sea salt

Instructions

  • Crack egg in a microwave safe, medium or large mug, and stir well with a fork.
  • Add oil, maple syrup, vanilla, and chopped apples, and stir well.
  • Add almond flour, psyllium husk powder, spices, and salt, and stir until all ingredients are well combined.
  • Place mug in microwave, and cook on high for 1 1/2 minutes. Stir ingredients with a fork, then cook for an additional 30 seconds. Serve while warm.

Notes

Serve this healthy mug cake with Greek Yogurt for a healthy, protein packed breakfast!
