Hands down, this 3 ingredient Quick and Easy Lentil Feta Bruschetta is my “go-to” recipe for holiday entertaining. Even better, I’ve paired it 3 simple, healthy, and delicious ways, so you can enjoy leftovers all week long!It seems almost a crime to call this Lentil Feta Bruschetta a “recipe”, and, to be perfectly honest, I didn’t invent it {I owe a huge thanks to one of my clients for sharing it with me!}, but I did come up with 3 SUPER SIMPLE and delicious ways you can nosh on this nutritious dip all week long.

Because, let’s face it…

We’re already half way through September, which means the holiday season is quickly sneaking upon us, which means things are going to get BUSY, and soon you will have lots of parties to host or go to, not to mention the TAILGATING that is to be done now that football season is upon us, and we San Diegans may be cheering on “The San Diego Chargers” for the last ever season.

Maybe.

And, just to be clear, there is no way that I will cheer for the “San Diego Raiders”, if that ever becomes a reality.

Maybe.

So, yep’, we all need this Lentil Feta Bruschetta in our life right about now.

And, if you are lucky enough to live near a Trader Joe’s, you can whip up this dip in under 5 minutes with these 3 ingredients–>Ready-to-Eat Steamed Lentils + Fresh Bruschetta Sauce + Feta Cheese…

BUT, fear not, if you are nowhere near a Trader Joe’s, you can still whip up this dip pretty darn quick, with any variety of dried {and cooked} OR canned lentils*, feta cheese, and your own DIY bruschetta sauce made with chopped tomatoes + extra virgin olive oil +balsamic vinegar + fresh basil +salt + garlic* + black pepper.

Ingredients

  • 1 package Trader Joe’s Ready-to-Eat Steamed Lentils*
  • 1 container Trader Joe’s Fresh Bruschetta Sauce*
  • 8 ounces feta cheese, crumbled

Instructions

  • Combine lentils, bruschetta, and crumbled feta cheese in a bowl. Stir ingredients together until well combined, and serve immediately, or may be stored in a covered container in the refrigerator for up to 1 week.
