Chai Apple Pie Healthy Mug Cake
Cake for breakfast! This paleo mug cake with apples and chai spices, is SO easy to make. Serve it with Greek yogurt for a delicious protein packed breakfast or healthy treat!

Ingredients

large egg

tablespoon
expeller pressed high oleic sunflower oil*

teaspoons
pure maple syrup
1/4
teaspoon
pure vanilla extract
1/2
apple with skin
core removed, and finely chopped

tablespoons
fine almond flour

teaspoon
psyllium husk powder
1/2
teaspoon
ground cinnamon
1/4
teaspoon
ground ginger
1/8
teaspoon
ground cardamom

teaspoon
ground cloves

teaspoon
sea salt
Instructions
Crack egg in a microwave safe, medium or large mug, and stir well with a fork.
Add oil, maple syrup, vanilla, and chopped apples, and stir well.
Add almond flour, psyllium husk powder, spices, and salt, and stir until all ingredients are well combined.
Place mug in microwave, and cook on high for 1 1/2 minutes. Stir ingredients with a fork, then cook for an additional 30 seconds. Serve while warm.
