What could be better than coming home from a long day of work, or shuttling the kids to and from sports and after-school activities, to a piping hot bowl of chili or a cup of luscious lentil soup?

This can be your reality when you defrost one of these healthy freezer meals and pair it with my super easy “Best Rolls Ever” aka Brazilian Cheese Bread and a green salad or fresh fruit on the side. Dinner is served!

  • Soups & Stews: Freeze in individual portions or family-sized batches in airtight containers. Leave some space at the top, as liquids expand when frozen.
  • Casseroles and baked dishes: Wrap tightly in aluminum foil or store in an airtight container. Consider slicing into portions before freezing for easy reheating.
  • Proteins (Chicken, Fish, Beans, Tofu): Store in meal-sized portions in silicone freezer bags with as much air removed as possible to prevent freezer burn.
  • Cooked Grains (Rice, Quinoa, Pasta): Cool completely before freezing in portioned containers or bags. Reheat with a splash of water to restore texture.
  • Baked Goods & Breakfasts: Wrap muffins, waffles, or pancakes individually for quick grab-and-go options. Use parchment paper between layers to prevent sticking.

Food Safety Tips for Freezer Meals

Food safety prevents spoilage and foodborne illnesses when preparing and storing freezer meals. Follow these guidelines:

  • Cool Before Freezing: Allow hot foods to cool to room temperature before placing them in the freezer. This prevents temperature fluctuations that can cause bacterial growth and freezer burn.
  • Use Freezer-Safe Containers: Choose BPA-free, airtight glass containers, straight-sided mason jars, or silicone freezer storage bags.

    Love, love, love this roundup! Even though it’s still too warm to go all out on soups and chilis (sigh…) I plan to start making 1-2 new recipes a week to fill the freezer for ski season so we can come home to plenty of reheat and eat options.
