Confession time. While Instant Pot and Air Fryers are all the rage these days, it’s been at least 6 months since I’ve used my Instant Pot, and I don’t own an Air Fryer. But, healthy sheet pan dinners , that’s a trend I can really get behind!

If you think about it, an Instant Pot still needs to be cleaned out, but a sheet pan properly lined with parchment paper or aluminum foil, can be wiped down & popped right back in your kitchen cabinets. Not to mention, the space Instant Pots and Air Fryers take up in your kitchen. Hello, minimalism!

What You Need to Make Healthy Sheet Pan Dinners

  • Sheet Pans. I keep a variety of aluminum sheet pans in my kitchen. You’ll want to make sure your don’t overcrowd your veggies and protein, so use a larger sheet pan as needed, or multiple sheet pans.
  • Parchment Paper or Aluminum Foil. Make clean up a cinch by lining your sheet pan with parchment paper or aluminum foil.
  • Food! A well stocked fridge and pantry with a variety of protein, veggies, fruit, herbs, spices, and other seasonings.
