Protein packed cottage cheese get's a sexy makeover in this simple summer recipe...Cantaloupe Breakfast Bowl!

When I first spotted a version of this yummy CANTALOUPE BREAKFAST BOWL at Eating Bird Food, I knew I had to recreate it on my own. So I did. And, oh my goodness, yum! And, because we’re talking simple this week, breakfast doesn’t get any easier than this.

Cantaloup Breakfast Bowl

This yummy Cantaloupe Breakfast Bowl is so easy to make, and super nourishing too!

Total Time: 10 minutes
Servings: 2 servings

Ingredients

  • 1 whole cantaloupe
  • 1 1/2 cups cottage cheese
  • 1 cup blueberries
  • 1/4 cup pecans, chopped
  • 2 tbsp hemp seeds

Instructions

  • Wash cantaloupe and pat dry. Slice in half and scoop out seeds.
  • Fill each cantaloupe half with 3/4 cup cottage cheese, then top each hald off with 1/2 cup blueberries, 2 tablespoons chopped pecans, and 1 tablespoon hemp seeds. Enjoy!

Notes

LOW FODMAP OPTION: Use lactose free cottage cheese (I like Green Valley Creamery). Decrease blueberries to 1/4 cup or swap with strawberries or raspberries-both will be delicious!

I created this recipe with Udi’s Gluten-Free Pizza Crust, but if you’re not following a gluten-free diet, use your favorite Pita bread. Oh, and can I brag about the fact that both my kids loved this salad too?!! #sorrynotsorry

  5. Don’t think I’ve taken the time to tell you how much I love the new look of your site! When I was a girl, we ONLY ate cantaloupe with cottage cheese. Growing up on a ranch in Montana, we only had fresh fruit in the summer (because any fruit that made it to Montana in the winter was terrible.) So cottage cheese + cantaloupe tastes like heaven to me!
