This power salad is loaded with nourishing superfoods like crunchy kale, crisp apples, purple cabbage, edamame, & sunflower seeds. Your body will thank you every time you eat it!

How many times have you gone to a restaurant, eaten something super duper delicious, and wanted to re-create that meal at home?? Like this Super Duper Raw Power Salad with apples, kale, cabbage, and more?!!
Me…um, about a zillion handful of times, but then my crazy busy life takes over, and my memory gets muddier and muddier, until I no longer remember what it was about that meal, that was so gosh darn delicious.
Not this time though.
A couple of weeks ago, Mr. Spicy treated me to lunch at one of my favorite local eateries, Urban Plates.
Usually I order the grilled wild ono nicoise salad, but this is a place where you stand in line to get your food, and the salad line is uber popular, which means you better not come in starving if you want a salad!
One look at Mr. Spicy told me this was not the time for line standing. My man was hungry. So, instead of waiting in line for the salad, I sacrificed myself {are you reading this honey???}, and opted for something from the much shorter “urban plates” line instead.
I chose grilled marinated wild ono {yep, I still got my omega-3’s!} with two sides~organic mashed potatoes and a super duper raw power salad that I have tried to re-create for you here today.
I’m sure I’m missing something from the original, but no matter, because this version is just as healthy and delicious as the original.
The key to building a super duper raw power salad, is to mix up a variety of textures {think crunchy cabbage, chewy berries, leafy kale} and flavors {savory edamame, sour apples, sweet maple syrup} to tantalize your taste buds.

Here’s my version, but feel free to experiment with your own veggies, fruit, nuts/seeds, and let me know how it turns out!

Super Duper Raw Power Salad
Ingredients
Dressing
- 3/4 cup extra virgin olive oil
- 1/4 cup white balsamic vinegar or apple cider vinegar
- 1 tablespoon maple syrup
- 1/8 teaspoon garlic powder
- 1/8 teaspoon salt
Salad
- 4 cups finely chopped kale, ~1 bunch
- 1 1/2 cups finely chopped purple cabbage
- 3/4 cup dried berries and/or tart cherries
- 1/2 cup shelled frozen edamame, thawed
- 1/2 cup shelled raw sunflower seeds
- 1/2 cup mung bean or other sprouts
- 2 finely chopped Granny Smith apples
- salt and fresh ground black pepper to taste
Instructions
- Make the dressing by combining oil, vinegar, garlic power, and salt in a lidded jar, and shake well to combine. Set aside until ready to use.
- To make the salad, combine all the remaining ingredients, and pour 1/2 cup dressing (you may add more or less to suit your taste) over ingredients. Toss well, then season with salt and pepper, and serve.
Notes
- I used a combination of tart cherries, blueberries, and raspberries for my dried fruit.
- You will have dressing left over.
- This salad will keep well for a day or two, especially if you add the dressing right before serving.
