I know what I will NOT be doing…

Hosting our usual 4th of July celebration and pool party at our house.

Nope. Not me. Not this year…

Instead, I plan to be lounging on the beach with my family, tropical cocktail in hand, soaking up a little Hawaiian sunshine 🙂

But, when my Twitter friend, Dr. Lynne Kenney, family coach, asked me for a “pool party” menu for the 4th, I thought it would be fun to put together a virtual 4th of July party so we could all celebrate together!

All recipes are naturally gluten-free, plus many vegetarian and vegan options. Oh, and most of them are not only delicious but pretty healthy as well!

    We usually have a large mixture of kids and adults and we adults love jello-shooter so I always make those and I make some “jello-shooters” for the kids with out the alcohol and I add little pieces of fruit in the kids jello and they love it!

    Chocolate chip chessecake stuffed strawberries Sounds delicious! Think I may have some new recipes to try out for the Fourth of July. Also I like to make a healthy treat for my son by slices bananas and freezing them for 1-2 hours then blending them up to make a healthy Icecream substitute!

    My fave summer picnic, pool, or beach treat is frozen cut up fruit! It is so awesome and both children and adults love it. What often surprises everyone is the frozen grapes… especially if you have been able to get hold of some rare but wonderful champagne small grapes.. they are out of this world frozen! For the beach, just bring large containers, and then clear cups to serve in. For picnic and pool you can serve in scooped out watermelon or canteloupes, or wonderful hostess bowls. We also love to bring hummus and gluten free chips or rice thins with us to these events. For the same events we have plenty of cut up veggies as well with everyone’s fave dip/sauce. And don’t forget the hydrating coconut water!

  17. I love portobello mushrooms slathered in Sweet Baby Ray’s gluten free Honey BBQ sauce. Add a few scallions and a hint of garlic. While everyone else is munching on cow and bird and you’re wondering if it’s breaded or has any soy, I’m in heaven. Non gluten free people tell me they love my mushrooms. They would look extra good on that lovely red Pottery Barn serving bowl!

    As it’s going to be a church function, I’m hoping for lots and lots and lots of home churned ice cream also.

  22. She beat me to it, but I agree with Heather… Sangria! Or any type of refreshing fruity cocktail, as long as there is alcohol in it somewhere! And all food should be on a stick, because who wants to juggle a plate and utensils while trying to hold a cocktail? Grilled meat or chicken or shrimp, on a stick. Fruit or grilled veggies, on a stick. Frozen treats, on a stick. That way everyone has a free hand to hold a drink! 🙂
