SMILE! Sunshine Chocolate Orange Slices, healthy shots, + more in this week’s edition of Happy Things , Healthy Living Tips!
HAPPY THING NO. 1 | SUNSHINE CHOCOLATE ORANGE SLICES
These scrumptious Sunshine Chocolate Orange Slices {Gluten Free, Vegan, Grain Free, & Low FODMAP}, made with fresh oranges from my tree, Taza Coco Besos {Amazon Affiliate link}, and Sea Salt were a big hit the other day when I shared them on Instagram. This was my first time trying Taza Chocolate, and it was SO yummy on it’s own, but even better on top of fresh orange slices, with a sprinkle of sea salt~a perfect bit of heaven when you’re craving a healthy treat!
Make ’em!–> Peel and slice 1 orange, and lay slices on a piece of parchment paper laid on top of a plate. Melt ~ 1 ounce of your favorite dark chocolate {preferably 70% or more cacao} in the microwave, then dip 1/2 of an orange slice in the chocolate, repeating with all of the slices, and lay them on the parchment paper. Sprinkle w/ sea salt, then place plate in refrigerator to cool, and allow chocolate to harden. Enjoy!!
HAPPY THING NO. 2 | MY CLIENTS & MY JOB!
I love my job!!! These beautiful roses are from my lovely client who is feeling fabulous 1 1/2 months after starting her customized elimination diet. When we 1st met, she was truly feeling horrible & had been to multiple doctors who said they couldn’t help her w/ her stomach pain. Now, she is positively glowing & I am so happy for her!!! As a bonus, she has gotten super creative in the kitchen & still gets to eat her chocolate too! This truly makes me SO happy 🙂 🙂 🙂
HAPPY THING NO. 3 | FLOWER CHILD RESTAURANT IN DEL MAR
“Healthy Food for a Happy World” ~ I love the slogan at the new Flower Child Restaurant that recently opened here in Del Mar where Mr. Spicy and I had the opportunity to enjoy a “date night” with complimentary food at their pre-opening in December.
Everything we tried was absolutely delicious, including the Madras Curry, Indian Spiced Cauliflower + Yuzu Brussels Sprouts, plus beer, wine, & kombucha are on tap too. HAPPY THING NO. 4 | FARMHOUSE CULTURE SMOKED JALAPENO GUT SHOTS
I think I mentioned in this post, that I was sick for most of December. HAPPY THING NO. 5 | SUNSET AT DEL MAR BEACH {AFTER THE RAIN!!!}
I know we are spoiled rotten by the weather here in San Diego, but we just finished up with 6 straight days of {much needed} rain. And, since these guys and I were going a bit stir crazy, I took them for a hike on the beach the other afternoon. It was actually still raining a little when we started our hike, AND it was high tide, so we got kinda’ wet, AND I managed to lose my car keys, so we ended up walking an extra 2 miles home, but it was TOTALLY worth it for this gorgeous sunset!
