Growing up, I was that strange kid who liked tomato juice and V8 juice. I also liked Stouffer’s Spinach souffle, which my kids think is bizarre, but if you’re of a certain age, you know what I’m talking about.
But I digress. We’re here to make vegetable juice, not spinach souffle. The beauty of this recipe is that no blender is required. Let me tell you why you’ll love this recipe and show you how easy it is to make!

Ingredients to Make Vegetable Juice

This is my typical combination of vegetables and fruit (tomatoes! cucumbers!) I use in this recipe, but as mentioned above, feel free to use any variety of vegetables you have on hand.
- Tomatoes. Use any variety of tomatoes, including heirlooms, grapes, cherries, Roma, etc.
- Bell Peppers. Red, green, yellow, orange. Drink the rainbow!
- Cilantro. For cilantro lovers only. So good!
- Onion. You may want to omit this if you have IBS and don’t tolerate onions. I love a little bit of sweet onion for flavor and prebiotics.
- Cucumber. It adds additional hydration and that delicious “cucumber water” flavor.
- Zucchini. It’s optional, but it’s a good source of lutein for eye health and a tasty way to use up your summer bumper crop.
- Jalapeno. It’s also optional but adds a kick of metabolism-boosting flavor.
- Salt and Black Pepper. Season to taste and enhance your veggie juice flavor.
- Optional Ingredients: Fresh or ground ginger or turmeric; leafy greens like kale, spinach, and arugula; celery; and green apple for a hint of sweetness. What else would you add to your vegetable juice?
How to Make Fresh Veggie Juice in a Blender
Making this vegetable juice recipe doesn’t get any easier than placing all your vegetables in a high-speed blender (I love my Vitamix!) and blending until the juice is fully liquified. If you’re adding jalapeno or other spices, add it at the end to taste.
- Pick your veggies. I like to use up whatever leftover bits and pieces of veggies I have on hand, including leafy greens or fresh herbs.
- Pop ’em in a blender.
- Blend, baby, blend.
- Pour it in jars {over ice is nice}, and serve!

For sure! Each glass of vegetable juice provides the following:
- A wide variety of plant-based foods are available to meet your goal of 30-40+ plants per week.

- A metabolism boost. Although it’s modest, studies show spicy foods, like jalapeno, may boost your metabolism up a notch. Every little bit helps, right?!

Serving Suggestions:
- Enjoy your homemade vegetable juice straight up over ice.
- Or, serve it in a bowl at room temperature, a la gazpacho.
- And, if you’re craving a Bloody Mary, this fresh veggie juice is the perfect base for adding vodka, tooโjust saying.

Fresh Vegetable Juice Recipe
Ingredients
- 3 cups chopped tomatoes, Heirloom or other ripe summer tomatoes
- 1 red orange, or yellow bell pepper, chopped in to large chunks
- 1 cup cilantro, de-stemmed
- 1/2 sweet onion, chopped in to large chunks
- 1/2 cucumber, peeled and chopped in to large chunks
- 1/2 zucchini, chopped in to large chunks
- 2-4 slices fresh jalapeno with seeds, or to taste
- 1/4 teaspoon sea salt, or to taste
- Fresh ground black pepper to taste
Instructions
- Place all veggies, except the jalapeno, in a powerful blender, such as a Vitamix, and blend until liquified.
- Add salt and pepper to taste and blend.
- Add 2 slices jalapeno, then blend and taste. If additional spiciness is desired, add 2 + more slices jalapeno and blend well.
- Serve over ice, or chill in refrigerator until ready to serve.
Notes
- Use this recipe as a starting guide for your own fresh veggie juice, but feel free to experiment with other vegetables based on your taste preferences, what’s in your fridge, and what veggies are in season.
- Adjust the spice as needed! With 4 slices of jalapeรฑo, this had a nice spicy zip to it, but feel free to adjust the amount based upon your own taste.
