These Easy Italian Lentil Nachos are your answer to These Easy Italian Lentil Nachos are your answer to “what to cook for dinner when you’re hungry, in a hurry, and really don’t want to cook!” Here’s how…

EASY ITALIAN LENTIL NACHOS: Preheat oven to 350 ° F. Combine Cooked Lentils {I love Trader Joe’s ready-to-eat lentils OR cooking a big batch of lentils ahead of time and freezing them} with a jar of Marinara Sauce in a mixing bowl. Spread Tortilla Chips on a baking sheet. Spread lentil mixture on top + a combo of Mozzarella & Parmesan Cheese. Bake for ~15 minutes, or until cheese is melted. Dig in, add some fresh fruit on the side, and dinner is served!
