HAPPY THING NO. 1 | EASY YOGURT PARFAIT RECIPE

Packed with 24 grams of protein, this Easy Yogurt Parfait Recipe is a delicious, and filling way to start the day! I made this version last week with end-of-summer nectarines, but feel free to substitute your favorite fresh, in-season fruit, or any equally nutritious frozen fruit. My yogurt parfait recipe uses Greek Yogurt, but this would be equally delicious with non-dairy or lactose free yogurt. The spices are key, IMO, but you can easily substitute the pine nuts with your favorite nuts or seeds. Enjoy! Easy Yogurt Parfait Recips

This easy yogurt parfait recipe with pomegranate arils, spices, and pine nuts is sure to be a new healthy favorite at your house. With 24 grams of protein per serving, it's sure to fill you up all morning long!

Ingredients

  • 1 cup plain, unsweetened yogurt {i.e. Greek, Skyr, Lactose Free, or Vegan-Coconut, Almond, Soy}
  • 3/4 cup chopped fresh or frozen fruit {i.e. nectarine, berries, orange, apple, pear, banana...}
  • 1/4 cup pomegranate arils, fresh or frozen
  • 2 tablespoons pine nuts
  • 1/4 teaspoon each {or to taste} ground: cardamom, ginger, and cinnamon
  • 2 teaspoons honey or maple syrup, optional

Instructions

  • Place yogurt in a serving dish. Top with chopped fruit, pomegranate arils, pine nuts, spices, and sweetener of choice

Notes

Low FODMAP Option: 1. Enjoy with Greek yogurt if you are able to tolerate it, otherwise swap with lactose free or a plant based low FODMAP yogurt. 2. Sweeten with maple syrup instead of honey. 3. Top with your favorite low FODMAP fruit.
Vegan Option: 1. Make with your favorite vegan yogurt. 2. Sweeten with maple syrup instead of honey.
Paleo Option: Make with your favorite coconut milk or cashew milk yogurt.

EASY ITALIAN LENTIL NACHOS: Preheat oven to 350 ° F. Combine Cooked Lentils {I love Trader Joe’s ready-to-eat lentils OR cooking a big batch of lentils ahead of time and freezing them} with a jar of Marinara Sauce in a mixing bowl. Spread Tortilla Chips on a baking sheet. Spread lentil mixture on top + a combo of Mozzarella & Parmesan Cheese. Bake for ~15 minutes, or until cheese is melted. Dig in, add some fresh fruit on the side, and dinner is served!
