Craving more gluten-free soup recipes? Making your own is so easy when you have a variety of simple ingredients on hand. The perfect recipe to make an easy and delicious soup is as follows:
Heat olive oil or another vegetable oil in a large soup pot, Dutch oven, or stockpot. I LOVE my Le Creuset Cast Iron Dutch Oven for making soup. Add onions and garlic (skip this step for low FODMAP soup) and saute over medium-high heat until softened,
Add additional ingredients as desired, including protein (chicken, turkey, beef, pork) and vegetables. Cook them for a few minutes to brown or lightly soften. Add salt, pepper, and other seasonings.
Pour vegetable broth or chicken stock over the soup ingredients. Increase the heat to high to bring the soup to a boil, then reduce to a simmer and cook until your protein is cooked through and your vegetables are at the desired consistency. Add additional salt, pepper, and seasonings to taste.
Enjoy your gluten-free soup as is, or add ingredients, including cooked beans, lentils, cooked pasta, cooked gluten-free grains, milk, or coconut milk. Serve as is or puree it with your hand blender or a regular blender for the creamiest, dreamiest soup.
Optional: Add fresh herbs, microgreens, freshly ground black pepper, red pepper flakes, lemon juice, chopped nuts, seeds, spices, and more for extra nutrition and flavor.
Storage: Keep extra soup in an airtight container in the refrigerator for up to four days or in the freezer
