Or, Cucumber Avocado Shots, as I like to call it, especially because Mr. Spicy doesn’t like cold soup, but he sure does love shots. Ha, ha!

Creamy, Dreamy Cucumber Avocado Shots! Who wants to do one with me???

Inspired by my California Avocado Grove tour and the fabulous Chef Pink, this Cucumber Avocado Soup has been on my mind ever since. And, now that I have my beloved Vitamix blender repaired and back in A-1 working condition {yippee!!!!} I decided to whip you up a batch to enjoy with me.

What makes this Cucumber Avocado Soup so healthy?

  • Healthy Fat. It’s packed with healthy monounsaturated fats-the kind that may help improve insulin sensitivity, and decrease inflammation.
  • Fiber!!! Did you know that avocados are a pretty darn good source of fiber? Each 1/2 cup serving has 8 grams of fiber. If you double the amount you’re eating, that’s 16 grams of microbiome friendly fiber. Wow!
  • Potassium. Important for maintaining healthy blood pressure, potassium is a key nutrient many of us are deficient in. The Dietary Reference Intake (DRI) for potassium ranges from 2300-3400 mg/day for adults. Each 1/2 cup serving provides ~ 1/4 of that amount.
  • It’s so versatile! Naturally gluten free, plant based, and low carb, this Cucumber Avocado Soup can be enjoyed on a wide variety of diets.

Did I mention yet, how easy this Cucumber Avocado Soup is to make?

It’s a 5 ingredient recipe (not including salt). You can make it in 10 minutes or less. And, in addition to a knife a cutting board, the only equipment you’ll need is a blender or food processor.

Let’s gather the ingredients to make this yummy Cucumber Avocado Soup!

  1. Ripe Avocados. Give your avocado a gentle squeeze to make sure it’s the perfect level of ripeness. Not too hard, not to soft (this will make your cucumber avocado soup too watery)~just like Goldilocks would approve!
  2. Cucumber. Cucumbers are so refreshing, and a delicious way to boost your hydration. I used English cucumbers, but you can use Persian cucumbers too-you just may need to add more, as they are smaller.
  3. Fresh cilantro. About 1 cup. It adds loads of flavor without additional calories. Of course, I recognize some of you may not be cilantro fans, so feel free to swap the cilantro with fresh basil, mint, parsley, dill, or other favorite fresh herb. We can still be friends. Wink, wink.
  4. Onion. Another flavor booster, and one of my favorite prebiotics for a healthy gut microbiome. If your tummy doesn’t like raw onions, or if you’re on a low FODMAP diet and tolerate 1/2 serve of avocado, but not onion, try adding green onion tops instead.
  5. Lemon Juice. This helps balance out the flavors of the cucumber avocado soup. Lime juice would be delicious too.
  6. Sea Salt. Add according to taste to help enhance all the rest of the flavors in the soup.

Cucumber Avocado Soup Serving Suggestions

The 1/2 cup servings (shots) I’ve featured here, make perfect party appetizers or a nourishing snack. But, you can double the serving size to 1 cup, and have a light, yet satisfying lunch or dinner.

Ingredients

  • 3 medium Haas avocados, peeled and pit removed
  • 2 medium cucumbers, peeled
  • 1 cup loosely packed fresh cilantro leaves, plus extra for garnish
  • 1/4 red onion, peeled
  • Juice from 2 lemons
  • 1/2 teaspoon sea salt, or to taste

Instructions

  • Peel and pit the avocado. Peel the avocado and chop into large chunks. Remove thicker stems from cilantro. Peel the onion and cut into large chunks. Place all ingredients in a food processor or blender, and blend or process until smooth. You can keep it somewhat chunky by pulsing your blender on and off, or blend until smooth and creamy.
  • Pour in to small glasses {~1/2 cup per serving} or bowls and place in to the refrigerator to chill. Garnish with fresh cilantro, if desired, before serving.

Notes

Ingredient Substitutions

  • Cilantro can be substituted with any fresh herbs, i.e. basil, mint, parsley, dill.
  • Swap the lemon juice with lime juice if you like.
  • Don’t tolerate raw onions? Try adding in the green tops of onions to enhance the flavor.
