Have you ever had a childhood song pop in to your head at the most unexpected time? That’s what happened to me today after I polished off my first {of many} one of these amazing, melt-in-your-mouth Pepper Jack Stuffed Mushrooms.
The song that came to mind?

I asked both my kids if they remembered it, and SiSi did {after I sang her a few lines} but Big Tex had no clue what I was talking about. Sheesh….I’m feeling like a seriously slacking mama right now!
But back to the line that popped in to my head…
It was “The cheese stands alone.”
As in, the Cabot Creamery Pepper Jack Cheese I used to stuff these bad boys with, totally stands out on it’s own when you take your first bite of these plump, juicy insanely delicious {just ask Mr. Spicy} stuffed mushrooms!
In addition to the Cabot Pepper Jack Cheese, you need only 5 other ingredients to make these incredible morsels of healthy deliciousness.
Chopped Olives.
Chopped Onions.
Chopped Red Bell Pepper.
Tomato Paste.

Note for my low FODMAP friends: Mushrooms and onions are significant sources of FODMAPs, but you can still enjoy a modified version by omitting the onions from the filling, and melting it on your favorite low FODMAP bread or crackers. Super yummy!
Pepper Jack Cheese Stuffed Mushrooms
Ingredients
- 36 whole white mushrooms
- 8 ounces Cabot Creamery Pepper Jack Cheese, grated
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped red bell pepper
- 1- 4.25 oz can chopped olives
- 1- 4.4 oz tube double concentrated tomato paste
Instructions
- Pre-heat oven to 400 degrees fahrenheit. Clean mushrooms, remove stems {save them for another recipe}, and place them in 1 or 2 large baking dishes.
- Combine grated cheese, onions, bell peppers, olives, and tomato paste in a mixing bowl, and stir until well mixed.
- Place a heaping teaspoon of cheese mixture in each mushroom, then bake in oven for ~20 minutes, or until cheese is melted and bubbly, and mushrooms are cooked. Allow to cool for 5-10 minutes, then transfer to a serving platter, and enjoy while still warm.
