Today’s post is a little bit of a mishmash…

  • Part Thanksgiving/Holiday deliciousness –> Macadamia Nut and Cherry Stuffing {gluten-free, vegan, & free of all major food allergens except for the nuts which can be omitted or substituted with extra cherries or pumpkin/other seeds}
  • And part travel adventures and fun–>5 perfect days in Maui, Hawaii!

OK-I lied.

It was actually 4 perfect days in Maui {thanks to my AMAZING husband of 15 years who surprised me with an anniversary trip to Maui last month} because the day we arrived, it was POURING down rain, and I thought I had cursed us and brought back all the rain from my trip to Spain and Portugal {still working on sharing those photos with you-hopefully will get to finally editing my pics over the Thanksgiving holidays!}.

But…

On our second day there, the rain Gods took pity on us, and we were treated to 4 absolutely brilliant days of Hawaiian sunshine.

Here’s how we celebrated…

4 Perfect Days in Maui, Hawaii

DAY 1…

Our 15th wedding anniversary! We started off with a relaxing morning at our hotel, the Westin Maui Resort and Spa on Kaanapali Beach, then got in a quick workout at the gym, followed by some yummy fish tacos at Ohana Tacos. After that, it was time for some football! For those of you who do not know my husband, aka Mr. Spicy, he is a sports fanatic. Whenever I complain about him watching a game on TV {I like sports too, but I’d rather go to the games then watch them on tv}, he always reminds me that I knew what I was getting in to before I married him-#truth. So…when he said that he wanted to watch the Chargers v. Broncos game on TV on our anniversary, I just smiled and said “Sure, honey,” but asked him to promise to stay in a good mood even if the Chargers lost. They did, but, he stayed in a very good mood, and we met lots of cool locals hanging out at Betty’s Beach Cafe who bought us drinks to celebrate our anniversary, so all-in all, a very fun afternoon, which we followed up with a fabulous dinner at the Lahaini Grill. Thank you to the best husband in the universe beyond and back!!!

DAY 2…

We spent a brilliant LAZY morning sipping coffee in bed while watching “Hoarding”on TLC. Have you ever seen that show? Oh, my! It was our first time watching, and I will never again complain that my house is messy. At least not until next year 🙂 This was followed by a massage at the spa at our hotel, then an afternoon hanging out at the pool and swimming at the gorgeous Kaanapali Beach. And, to cap off this perfect day, we enjoyed a sunset dinner at Kimo’s in Lahaini, follwed by the MUST SEE show, Burn’n Love. Yes, my friends, Elvis is alive! Seriously though, it was a spectacular show, and even more special because, not only is my hubby a sport fanatic, he’s an Elvis fan too, and we danced to I Can’t Help Falling in Love With You at our wedding. How perfect is that?! 🙂

DAY 3…

We woke up early this morning to drive to Kihei to meet up with Maui Snorkel Charters for a morning of snorkeling at Molokini Crater and Turtle Town. Mr Spicy and I have done our fair share of snorkeling before, and we both thought this one of the best trips we’ve done, both for the amazing snorkeling where we saw loads of brilliantly colored tropical fish and coral, plus eels, and, yes, sea turtles, as well as for the fun crew on the boat. Oh, and as a bonus, we saw both Bottlenose AND Spinner dolphins swimming right next to us on the boat! After that, we had a quick bite to eat at the very pretty Fairmont Hotel , then headed to Merriman’s Kapalua for happy hour drinks and snacks. Then, we were absolutely exhausted, so we went back to our hotel, climbed in to bed, and watched a movie before getting some much needed zzz’s.

DAY 4…

One of the most gorgeous beaches ever-Red Sand Beach in Hana on the island of Maui, Hawaii.The Red Sand Beach in Hana may be just about one of the prettiest beaches I’ve ever visited! If you go to Hana, this beach is a must. 

Our last full day in Maui ended on a fabulous note with a drive on the infamous road to Hana, which we had done 16 years earlier on our first trip together to Maui. This time though, we took a little detour and stopped off at the Surfing Goat Dairy where we feasted on their goat cheese sampler plate for a mid-morning snack, took a guided tour of the farm, and got to feed some goats. Pinch me. I was in pure goat heaven! Then, once we made it to the pretty little town of Hana, we had some really delicious Thai food at Thai Food by Pranee . After that, our last stop was perhaps one of my favorite stops of the trip-a {very short} hike to one of the prettiest beaches I’ve ever been to, the Red Sand Beach in Hana. The path to the beach is not marked, but you start the hike in a field just to the North of the Thai restaurant, and across the street form the local baseball fields. Follow the advice on Trip Advisor and take the lower trail, since, according to reviews on Trip Advisor, the upper trail can be quite hazardous. You will first come to the beach pictured above. Continue across the rocks and back up on the trail which takes you to a gorgeous swimming cove that is sheltered from the surf. You absolutely MUST go for a swim here. We had planned ahead and brought our bathing suits, but if you don’t have one, fear not, as clothing is apparently optional here. Not that anyone ventured out in their birthday suits the day we were there 🙂

So there you have it…4 absolutely perfect days in Maui!

And, now for the stuffing recipe that was inspired by our trip to Hawaii, you will definitely want to head on over to the Stone Soup Blog where I am sharing my delicious recipe for everyone to enjoy! I created the recipe with many of my clients in mind who have multiple food allergies and sensitivities, as it is free of wheat, gluten, dairy, soy, and eggs. For those with nut allergies, skip the macadamia nuts, and  substitute with pumpkin seeds-yum! And,if you are following a low FODMAP diet, take out the onions and substitute the tart cherries with dried cranberries-just a 1/2 cup total for the entire recipe which serves 8!

  1. What a fun post! A delicious, flavour-packed recipe for the winter holidays – or any winter meal -plus a gorgeous travelogue! Your pictures are terrific! You and Mr Spicy seem like such a fun and compatible couple. Congratulations {again!} on your anniversary.     1. Thanks Laura-he’s the best! And, oh my goodness, HUGE perspective about our messes after watching Hoarding. Note: I am typing this surrounded by big stacks of paper all around my office, and I’m sure paperwork from my kids’ school that I need to sign 🙂
