Grape tomatoes, (canned) chickpeas, kale, and Greek yogurt are staples in my kitchen. Mixing in a little leftover Greek Salad Dressing from Leucadia Pizzeria for a Power Ball party we hosted for our neighbors {No-we did not win!} gave this plant powered Chickpea, Kale, and Tomato Salad a delectable creaminess!

Chickpea, Avocado, Carrot Smash

Going topless (did I get your attention??) is one of my favorite ways to enjoy some carbs at lunch without going overboard, and this Chickpea, Avocado, Carrot Smash served open faced on your favorite bread (like this yummy vegan, gluten-free Cook’s Sourdough Bread) topped with a combo of mashed chickpeas and avocado is delicious!

Drizzle a little avocado or other oil, along with some heart healthy hemp seeds and your belly will be pleasantly filled until snack time! Recipe is vegan and gluten-free.

Have you gotten on the cauliflower rice trend yet? After religiously checking my neighborhood Trader Joe’s for cauliflower rice for almost 5 months, I scored big when I found bags in both the fresh produce section AND the frozen section. Ever since then, I’ve been pairing cauliflower rice and peas with whatever leftovers I can find in my fridge.

Like this seared salmon, yogurt raitia, and mango chutney. I had seared a big batch of Wild Alaska Salmon (here’s my “how to” guide on how to sear salmon) a couple of days before, and the last 2 ingredients were leftover from the night I had a craving for Indian food and ordered some in from Door Dash.
