No Bake Vegan Cherry Pie (Fresh Cherries, Chocolate Crust)
No-bake vegan cherry pie is a fresh, healthy summer dessert with a chocolate-macadamia-coconut crust. Gluten-free, no oven needed!
If you’re a cherry lover like me, you NEED this recipe in your life! It’s based on the classic combo of cherries + chocolate, but waaaay better than super-sweet, syrupy chocolate-covered cherries IMO.
Featuring a no-bake chocolate macadamia coconut crust, fresh cherries, and coconut whipped cream, it’s gluten-free, healthy enough to eat for breakfast, and delicious enough for dessert. You in???
🍒 Vegan Cherry Pie Ingredients
For the crust: macadamia nuts, cocoa powder, shredded coconut, hemp seeds, maple syrup, and a pinch of sea salt. No baking, just a quick pulse in the food processor.
For the filling: fresh sweet cherries, full-fat coconut milk (well-chilled, so the cream separates), a touch more maple syrup and vanilla for the whipped topping, and cacao nibs if you want some crunch on top.
How to Make a No-Bake Fresh Cherry Pie
- Pulse the crust ingredients in a food processor until finely chopped, then press into mini tart dishes and chill.
- Pit and prep your cherries.
- Whip the thick coconut cream (skim it off the chilled can) until fluffy, then mix in vanilla and maple syrup.
- Top the chilled crusts with cherries and coconut whipped cream. Serve right away or chill until ready to eat.

No Bake Vegan Cherry Pie
Ingredients
Crust
- 1 cup unsalted macadamia nuts
- 3 tbsp unsweetened cocoa powder
- 2 tbsp unsweetened shredded coconut
- 2 tbsp hemp seeds
- 2 tbsp pure maple syrup
- 1/8 tsp sea salt
Pie
- 4 cups raw sweet cherries, de-stemmed & pitted
- 14 ounces coconut milk, full-fat, well-chilled
- 1 tsp pure maple syrup
- 1/4 tsp pure vanilla extract
- cacao nibs, optional, for garnish
Instructions
Make the crust
- Place macadamia nuts, cocoa powder, shredded coconut, hemp hearts, 2 tablespoons of maple syrup, and sea salt in a food processor bowl, and process until nuts are finely chopped and the mixture is well combined.
- Divide the crust mixture evenly, and press into 4 individual mini pie/tart dishes. Chill in the refrigerator until ready to be filled.
Prep the cherries & make the whipped cream
- Wash the cherries, discard stems, and remove the pits with a cherry pitter.
- Separate coconut liquid from thick coconut cream, and place the thick cream in a chilled mixing bowl.* Using a hand mixer, whip coconut cream, ~5-8 minutes, until it is the consistency of whipped cream, then mix in vanilla extract and remaining 1 teaspoon of maple syrup.
Assemble the individual cherry pies
- Remove the crusts from the refrigerator, divide the cherries into 4 equal servings, and place on top of the crusts. Top each tart with 1-2 tablespoons whipped coconut cream, and sprinkle optional cacao nibs on top. Serve immediately, or chill in the refrigerator until ready to eat.

I’m a fan of anything chocolate covered ;). There’s so many wonderful flavors going on in this pie that I MUST go get me some cherries now. I’ve been trying to consume a variety of nuts rather than my usual almonds and walnuts so I’m totally digging the macadamia nuts as well 😉 Pinning!

I love cherries, pit cherries, have them for breakfast and despise chocolate cherries in confectionary boxes (especially those harsh alcoholic ones!). This however, is fantabulously delicious sounding and any other superlative going. Cherries are my favourite fruits, breakfast is my favourite meal. Done deal.
