Scrambled Eggs in a Jar!

Inspired by one too many rushed school mornings where one teenage daughter, who shall remain unnamed, left her “stuck-on-scrambled-egg-skillet” in the sink, leaving Mr. Spicy {aka “the dishwasher”} cursing her out, these scrambled eggs in a jar were born.

FYI: 15 year old daughter {and 13 yo son} do help withย the dishes, but as any parent of a teen will attest too, it’s hard enough getting your teenager to eat a nourishing breakfast, let alone eat that nourishing breakfast, AND do the dishes, while still getting out of the house to go to school on time. Right?!

Budget notes: All ingredients were purchased from Trader Joe’s in San Diego. The eggs, sugar plum tomatoes, microgreens, and avocado were all organically grown too!

  • Your eggs may require more or less cooking time, depending upon the wattage of your microwave. I discovered 1 1/2 minutes on high power is perfect with my microwave~experiment with your own to find the optimal cooking time.
  • Want to save even more time? Pre-crack your eggs in a mason jar, and keep it sealed in the refrigerator, ready to go!
  • Although these are perfect for a healthy grab-and-go breakfast, they’re deliciously adaptable for lunch or dinner too. Try serving them “bar” style, where everyone gets to add their own toppings, for a fun family dinner idea!

Ingredients

  • 4 large eggs
  • 2 tablespoons pesto* {or salsa, marinara, bruschetta, garlic olive oil, etc.}
  • 1 cup sugar plum, grape or cherry tomatoes, sliced
  • 2 ounces feta cheese, crumbled
  • 1 cup microgreens {or spinach arugula, kale, 1/2 avocado, etc.}
  • Fresh ground black pepper to taste

Instructions

  • Crack 2 eggs each into 2 wide mouth mason jars. Stir well to combine with a fork or whisk. Place 1 jar at a time in the microwave and microwave on high power for 1 1/2 to 2 minutes.
  • Carefully remove jar from microwave, and repeat with second jar. Use a fork to gently break up scrambled eggs, then top each jar of eggs with 1/2 of the pesto, tomatoes, cheese, and microgreens before serving.

Notes

*Feel free to sub your favorite toppings, cheese, veggies, herbs, and seasonings to suit your diet {i.e. low FODMAP} and preferences. Be creative!
