After a couple of week’s of May gray and June gloom here in San Diego, I’m excited for the sunshine and warmer temps we’re having this week~perfect for this Grapefruit Mint Superfood Smoothie I just whipped up, that will be on repeat at my house ALL SUMMER LONG! Here’s my quick & easy recipe…
Grapefruit Mint Superfood Smoothie
Ingredients
- 1 ruby red grapefruit, peeled and de-seeded, cut into chunks
- 1/2 cup Greek yogurt
- 1/2 cup unsweetened organic soy milk, or dairy/non-dairy milk of choice
- 1 handful fresh mint leaves, plus extra for garnish
- 1 teaspoon honey
- Pinch of salt
- Optional, 1 scoop Resveratrol Reds Whole Food Blend Antioxidant Powder {affiliate link}
Instructions
- Place all ingredients in Vitamix {affiliate link} or other high powered blender. Blend on high speed until all ingredients are smooth and well combined. Serve over ice.

I’ve shared my love of community before, and I feel SO lucky to live in a neighborhood where I’m friends with many of my neighbors. One of these sweet neighbors is Lexie, who comes over to our house regularly to pick ???off our tree. She recently brought us a jug of her homemade “Lexie’s Lemonade” that she made with our lemons, and it was the PERFECT blend of sweet & sour. I love my neighbors!
HAPPY THING NO. 4 | GLUTEN-FREE CINNAMON LEMON COCONUT BLISS BALLS
Word of warning: these Cinnamon Lemon Coconut Bliss Balls {gluten free, vegan, low FODMAP, paleo} are ever so slightly addictive. HAPPY THING NO. 5 | MR. SPICY’S BIRTHDAY CELEBRATION
Last, but certainly not least, we celebrated Mr. Spicy’s birthday this week with a family dinner {SiSi helped my cook this yummy Steak Diane & made her favorite sauteed carrots and zucchini with LOTS of garlic}. We also lit the candles on an ice cream cake, sang {horribly, but joyfully} the happy birthday song, and presented the birthday boy with tickets for 2 {date night!} to see Escape to Margaritaville at the La Jolla Playhouse. Happy Birthday Mr. Spicy~We love you!!!
