Fresh Veggie Juice in 5 Minutes

Before I share the recipe for this great recipe for Fresh & Spicy Summer Veggie Juice in a Jar, let me just tell you that I have fully embraced this month’s Recipe ReDux Theme, Raising the Bar on Food in a Jar.

Here’s the great thing about serving food in jars…

It’s fun, it’s budget friendly {use any leftover jars you already have-no need to buy extra dishes}, and, if you use small jars, it’s a great way to cut down on portion size.

The next time you get an ice cream craving, bust out the little jars instead of the big bowls, & you’ll see exactly what I mean 🙂

In all fairness though, there’s no need for portion control with this veggie juice because it’s super simple, with no added-sugar…

Just fresh summer veggies {heirloom tomatoes, sweet onions, red bell peppers, cucumbers, zucchini}, salt & pepper, + a kick of spice from fresh jalapeño.

That’s it!

How to Make Fresh Veggie Juice in a Blender

  1. Pick your veggies. I like to use up whatever leftover bits and pieces of veggies I have on hand, including leafy greens or fresh herbs.
  2. Pop ’em in a blender.
  3. Blend, baby, blend.
  4. Pour it in jars {over ice is nice}, and serve!

In less than 5 minutes, you end up with the most delicious and super nourishing fresh veggie juice, that looks like this…

Fresh Veggie Juice

Servings: 5 cups

Ingredients

  • 3 cups chopped tomatoes Heirloom or other ripe summer tomatoes
  • 1 red orange, or yellow bell pepper chopped in to large chunks
  • 1 cup cilantro de-stemmed
  • 1/2 sweet onion chopped in to large chunks
  • 1/2 cucumber peeled and chopped in to large chunks
  • 1/2 zucchini chopped in to large chunks
  • 2-4 slices fresh jalapeno with seeds or to taste
  • 1/4 teaspoon sea salt or to taste
  • Fresh ground black pepper to taste

Instructions

  • Place all veggies, except the jalapeno, in a powerful blender, such as a Vitamix, and blend until liquified.
  • Add salt and pepper to taste and blend.
  • Add 2 slices jalapeno, then blend and taste. If additional spiciness is desired, add 2 + more slices jalapeno and blend well.
  • Serve over ice, or chill in refrigerator until ready to serve.

Notes

  • Use this recipe as a starting guide for your own fresh veggie juice, but feel free to experiment with other vegetables, based upon your taste preferences, what’s in your fridge, and what veggies are in season.
  • For a low FODMAP option, omit raw onions, or substitute with green onion tops.
  • Adjust the spice as needed! With 4 slices jalapeño, this had a nice spicy zip to it, but feel free to adjust the amount based upon you own taste.

  1. My grandmother made something very similar to this, she said it was the world’s greatest hangover cure… It’s crazy how recipes from the past resurface with an entirely different (and much healthier) purpose. 🙂

  2. In the past I have played around with just such a juice, but never felt it was right (always trying to replicate the hit of V8!). I will definitely be trying this very soon as I trust your judgment in these things (all things food actually). Love your veggie shots!
