Fear not, if you are nowhere near a Trader Joe’s, you can still whip up this dip pretty darn quick, with any variety of dried and cooked OR canned lentils, feta cheese, and your own DIY bruschetta sauce made with chopped tomatoes + extra virgin olive oil, balsamic vinegar, fresh basil, salt, garlic, and black pepper.

Instructions
- Combine lentils, bruschetta, and crumbled feta cheese in a bowl. Stir ingredients together until well combined, and serve immediately, or may be stored in a covered container in the refrigerator for up to 1 week.

Tried this at Trader Joe’s and bought the ingredients to try at home. It is so good. It is a cold night so I wanted something warm so I spooned some into a tortilla, wrapped it up and heated it just until warm. So good!

You can make it with feta cheese, lentils (either cook them yourself-pretty easy-or use canned), then make the bruschetta yourself (unless your local grocery store carries pre-made bruschetta). I don’t have a bruschetta recipe on my website, but this one (minus the bread) looks pretty good. Let me know how it turns out!
