This easy roast turkey breast with fresh rosemary and thyme, is so moist and delicious! Make it for a healthy weeknight dinner, or for the holidays when you're not cooking for a crowd.
Place turkey breast, skin side up, on a shallow baking dish or roasting pan. Drizzle with olive oil, and cover with chopped herbs, salt, and pepper. Spread mixture on both sides, and underneath skin.
Place turkey in oven, and roast until the skin is golden brown, and thermometer reads 165 degrees F in the center of the breast. Remove the turkey at ~ 20 minute intervals to baste with drippings.
Remove turkey from oven when it is done, cover it with aluminum foil, and allow to cool for 10-15 minutes before slicing and serving.
Notes
Your cooking time and number of servings will depend on the size of your turkey breast. I used a half turkey breast which took about 45 minutes to reach 165 degrees F, and yielded 1 1/2 pounds of cooked turkey meat.
