Preheat oven to 350 degrees F. Place apples in a saucepan with apple cider and mulling spices {if using}. Heat on high until boiling, then turn heat down and simmer for 15-20 minutes.
While apples are simmering prepare topping. In a bowl mixing bowl, combine the oats, sorghum flour, tapioca starch, brown sugar, cinnamon, and melted vegan butter. Stir with a fork to combine.
After apples are done, removed them with a slotted spoon, and divide them in to 4 individual ramekins. Divide topping amongst ramekins and sprinkle on top. Bake in oven for approximately 20 minutes, or until topping is crispy.

Ingredient Swaps & Tips
If you use spiced apple cider (I love Trader Joe's brand), you can omit the mulling spices.
Don't have sorghum flour or tapioca flour? Use your favorite gluten-free flour blend instead.
Leave the apple skin on for extra fiber and antioxidants.
