Weekly Meal Plan & My Happy Things: Rock Climbing, Baked Taco Casserole & a Banged Up Shin!

Hmm…Can you believe it’s been over 3 month’s since I posted my last weekly meal plan here?

Don’t worry…

I have been eating.

And, doing SOME meal planning on Pinterest too, but I confess that there have been several weeks this summer with no meal plans at all.

With summer travel, more relaxed schedules, a break from some team sports, and no homework for the kids, it’s a lot easier not to plan meals as often in the summer.

But you know what?

The kids go back to school this week 🙂 🙂 🙂

Is that too many happy faces???

Not that I’m excited or anything…

And, with that comes homework, more after school sports, and more craziness in general, which makes regular weekly meal planning one way to keep my sanity.

So, without further adieu, here’s my weekly meal plan for this week, and a peek and some of my latest happy things…

  • Crock Pot BBQ Chicken from Janette at Jeanette’s Healthy Living
  • Baked Potatoes
  • Salad w/ lettuce, red cabbage, carrots, & avocado.
  • Fresh apple slices

HAPPY THING #1 ~ Grilled Veggie Tacos

Veggie Cheese TacosI can’t get enough of these veggie tacos I’ve been munching on for lunch lately!  Super easy to make too…Here’s how: 1. Saute veggies of choice in a pan w/a little oil.  This combo above has kale, red bell peppers, and mushrooms, but you can choose any veggies you like. 2. Heat tortilla {I like corn tortillas or Rudy’s gluten-free flour tortillas} on griddle, or in a pan, and top with ~1 oz shredded cheese {Monterrey Jack…Cheddar…etc}. 3. Once cheese is all melted, top with sauteed veggies and fold in half.  4. Enjoy with salsa, such as my favorite La Salsa Chilena.  Yum!

HAPPY THING #2 ~ A Well-Organized Spice RackSpice Rack // The Spicy RDA few months ago I re-organized my Spice Rack and wrote my Delicious Kitchen Guide to A Well Stocked Spice Pantry.  Being one of those people who’s really good at organizing things, but not quite as good at KEEPING things organized, I’m thrilled to say, that several months later my spice rack is still looking really good!  Now if only the rest of my house would stay that way…

HAPPY THING #3 ~ Summer Sweet Juicy Nectarines

Nectarines & Greek Yogurt // The Spicy RDGrowing up, we had a nectarine tree in our backyard, and they have always been one of my favorite summer fruits.  Nectarines are perfect on their own, but chop em’ up, and thrown em’ on top of plain Greek Yogurt, and you have a perfect breakfast, snack, or after dinner dessert. Yum!

HAPPY THING #4 ~ Hot Cilantro Jalapeno Sauce

Hot Jalapeno Sauce // The Spicy RDI’ve always loved the hot green chutney that comes along with Indian food, so I was super excited to discover this Off the Hook Spicy Jalapeno Sauce, which tastes very similar, at Jimbo’s Del Mar recently.  Spicy Sauce = Happy Me!

HAPPY THING #5 ~ Trying Something New…

Rock Climbing at Mission Trails Regional Park // The Spicy RDDon’t you LOVE trying something new???  I do!  So, I was excited to find a Groupon earlier this summer for an outdoor rock climbing class with The Southern Terrain, an outdoor adventure company in San Diego. Up until this weekend, the only rock climbing I had done, was in an indoor gym.  Fun, but definitely not the same as climbing real rocks outdoors. I convinced my friend Jen to join me, and this past weekend we climbed the rocks at Mission Trails Regional Park with instructors Joshua and Ryan {great guys!}, plus 6 other adventurers. I reached the top on my first two climbs, and felt victorious, but then on my 3rd {hardest} climb, I got 1/2 way up, then got “stuck” and couldn’t figure out a way to get up any higher.  That was all fine and good, but then I started  to come down a little too quickly and managed to whack my shin on the rocks. Oops!  I will spare you the bloody details, but suffice it to say, when I got home, and took a closer look at my wound, both Mr Spicy and I decided stitches might be in order, so off I went to Urgent Care…You might think it’s a little strange that I list this as one of my happy things, but it felt great to feel like a kid again…adventurous and with a battle scar to prove it!

  1. What a great weekly meal plan and that spice rack….I need to get organized. I’m also going to have to prep more food on the weekends. Last week was orientation week for my dietetic internship, and I thought I had enough meals to last me through the week ..but nope…my helpful husband had a ravenous appetite.

    And ouchie..I’m so sorry that you got hurt. On the other hand, you sure did prove yourself to be an adventurer ;). I’ve been wanting to try rock climbing as well. Hope you get plenty of rest this weekend, although I have a feeling you are out doing something fun ;).

  2. Sorry about the boo-boo (can you tell I have preschoolers at home?!) Can’t wait to try the smoky corn fritters…corn is coming out of my ‘ears’!

    Your weekly menu sounds good! I’ll have to get back to meal planning, too. Like you, I didn’t plan that much during the summer and it worked out fine. But with school and after school activities, we’ll definitely need a plan!

  5. Summer just flew by! Can’t believe school is already in session. I’m going to have to get better at planning meals ahead of time this year. Thinking I might even make dinner in the morning ;). Thanks for trying my Pulled Chicken – it will be on our menus a lot this fall.

    1. It sure did Jeanette! I just walked BIg Tex to his 1st day of 5th grade & SiSi starts Middle School tomorrow-I may shed a few tears 🙂 We can’t wait to try your pulled chicken this week!
