Weekly Meal Plan & My Happy Things: A Sneak Peek at My Grand Canyon Adventure!

Wow~It’s hard to believe, but my last Weekly Meal Plan & Happy Things post was all the way back in October!

Now, don’t you all worry.

I have definitely been eating 🙂

I just haven’t been posting my meal plans here, and to tell, the truth, I’ve been a little wonky with the meals I have planned these past couple of months.

Not to worry though!  The holidays are over, and it’s time to start regular planning again, now that SiSi and Big Tex are back in school and our break from sports is officially over.

Sigh…

I really thought we had another month until the start of softball and baseball season, but NO, Mr. Spicy had to sign both of the kids up for basketball this year, so here we are, with after school homework, sports, piano, and, time for play, meal planning becomes more important than ever, if I want to keep my sanity.

WEEKLY MEAL PLAN

DAY ONE

  • Mahi Mahi Fish Tacos with my homemade Cara Cara Orange Salsa Fresca
  • Fixins’ include corn tortillas, cabbage, white sauce {1/2 mayo, 1/2 Greek Yogurt}, shredded cheese, & cilantro.
  • Fresh pineapple slices

DAY TWO

DAY THREE

DAY FOUR

  • Herb Roasted Turkey Breast from key ingredient {Saving leftovers for sandwiches, soups, salads, etc}
  • Stuffing
  • Glazed Carrots
  • Tangerines

DAY FIVE

Mini Leg Lamp from A Christmas Story

Leg Lamp.  Love my hubby for putting this in my stocking this year!  “A Christmas Story” is one of my all time favorites, and I smile every time I see this mini leg lamp on my desk 🙂

Masala Peas from Indian LifeMasala Peas.  A new snacking favorite, with simple ingredients {peas, expeller pressed canola oil, spices} from Indian Life. Yum!

  1. Ooh where to start food or travel? Grand canyon, we may go this summer so I’m curious to hear more, love Sedona. We are in VT most weekends (ok all) this winter, going to MExico in March hopefully with book turned in, Jazz Fest in May in New Orleans and that’s as far as we are. Love your meal plans. that polenta concept is making me curious. Happy right now…left over grass-fed beef meatloaf for lunch, csa box filled with goodies…

  2. Look at your adorable family! I would love to do one of those runs. The lamp is awesome. How can that not make you smile?! I am with you- need my weekly meal plans to make it through the week even though I have been slacking more than usual. It happens. 😉

    1. We loved the polenta Kiersten! I adapted it a little, by making it like a lasagna with a layer of ricotta pureed with spinach-delicious! Thanks so much for the inspiration!

  4. First off, that leg lamp is BRILLIANT! What a great stocking stufffer. Now on the must-make list – those donuts (need to get me a donut pan) and your Cara Cara salsa – craving all types of citrus/avocado combos this time of year

    1. So glad you like the leg lamp too Deanna! And, yes, you definitely must get a doughnut pan! I can’t say I’ll be making doughnuts every weekend, because they are definitely on the indulgent side, but once a month can’t hurt 🙂 Cara Cara oranges are my favorites-so happy they’re back in season!

  5. I have been thinking about those donuts since I saw them this morning!! I think they are a must try… I”ve never forayed into the gluten-free baking world, but I’m starting to look more closely at those recipes. This may be my first attempt!
    I’m eager to see your Grand Canyon pics!! I’ve never been there, and for the last 3 summers I’ve been saying, “How about the Grand Canyon??” Everyone says “Uh… no thanks.”. I think I”m going to make them go this summer… we’ll see!

    1. I do hope you try the doughnuts {and other gluten-free baking} Kim! The nice thing about these doughnuts are that there are only 2 different gluten-free flours involved, so not too complicated lie some recipes. Also, the Grand Canyon is a MUST! I had been to a different spot back in my teens & I think my parents took me there as a little kid, but I had never seen it covered in snow-absolutely gorgeous! I am dying go back with my kids and husband soon. Hopefully you can convince your family to go, otherwise a “girl’s trip” is a lot of fun 🙂
