Weekly Meal Plan and My Happy Things: Derby Pie, Crazy for Kale, and More!

I know I still owe you a carrot cake smoothie, and I PROMISE it’s coming soon, but it’s been awhile since I posted my weekly menu plan here {you can always see my weekly updates here on Pinterest}, and my happy things have been piling up, so I though it would be a good time to share some happy cheer with y’all 🙂

So, first up, this week’s dinner plan, all gluten-free or adapted to be gluten-free, then next up, my happy things!

Weekly Meal Plan: Week of May 6, 2013

DAY ONE

  • Lasagna Soup from A Farm Girl Dabbles {I was supposed to make this last week, but never got around to it.}
  • Salad w/ lettuce, purple cabbage, sliced fennel, and pinenuts.
  • Fresh orange slices

DAY TWO

DAY THREE

  • Baked Chicken Stuffed w/ Pesto and Cheese from Kalyn’s Kitchen.  If  you’ve never made this, it is a MUST, and is one of my family’s favorite all-time recipes.  Seriously!
  • Salad with lettuce, purple cabbage, carrots, and avocado.
  • Fresh strawberries

HAPPY THING #1

Sweet Note//The Spicy RDA sweet note from Little Bro {Big Tex} to Big Sis {SiSi}  There was a sibling squabble, about something silly of course, but SiSi & Big Tex made up, and played catch outside together.  Makes my heart melt just a little bit 🙂

HAPPY THING #2

Gluten-Free Derby Pie//The Spicy RDA personal slice of gluten-free Derby Pie. It’s nice {really nice!} to have a friend from Kentucky who throws a big Derby Bash every year with her hubby and makes me my very own gluten-free Derby Pie.  Thank you Kim!!!

HAPPY THING #3

Del Mar Beach Train TracksA heart pumping, sweat inducing run above the beach in Del Mar. It’s been awhile since I’ve been on a run, so this recent jaunt from my house to the cliffs above the beach felt SO good!

HAPPY THING #4

Tasty Bite Sample//The Spicy RDMadras Lentils & Thai Lime Rice from Tasty Bite. I recently received a goodie box courtesy of my friends at Tasty Bite, containing yummy vegetarian and gluten-free meals to try.  I haven’t tried all the samples yet, but I highly recommend the Madras Lentils and Thai Lime Rice.  What I especially love about Tasty Bite meals is the ingredients. The Madras Lentils contain: water, tomatoes, lentils, red beans, onions, cream, salt, butter, sunflower oil, chilies, and cumin.  That’s it! Thank you Tasty Bite!!!

HAPPY THING #5

Kale Caesar SquareRunning out of this Kale Caesar Salad at a dinner party.  Mr. Spicy and I hosted the dinner portion of a Progressive Party for 22 people last weekend, and the first thing to go was this Kale Caesar Salad.  Imagine this…I had to run up to my rooftop in the pitch dark, to pluck kale from my rooftop garden, because everyone had inhaled the first bowl.  Can I say I LOVE getting people excited to eat kale?!!!

  1. Ah, that note was SO sweet. Bless 😀 My daughter is an only so she misses out on all the squabbles, but unfortunately also misses out on the special love between siblings. And as a southerner at heart (albeit from Florida so that almost doesn’t count) I have heard of Derby Pie but I don’t think I have knowingly eaten any. Sounds delicious!

    1. My pleasure! It is absolutely one of our favorite meals Kalyn! I even made it for my dinner party (along with the kale caesar) and it was inhaled! I thought there would be some leftovers for my kids, but there weren’t any, so my daughter made me promise to make it again soon 🙂
