Hi There! It’s been awhile since I’ve shared my latest happy things…Strawberry Top Lemon Infused Water, Zucchini Noodles,and more, so here you go! Plus, I’ve got some fab links to share with you today. Come join the fun & let me know what’s making you happy lately!

Strawberry Top Lemon Infused WaterHave you tried Strawberry Top {Lemon} Infused Water yet? If not, you should! I taught a class on nutrition and healthy snacking to a kid’s running group {Sew Fun to Run-check it out!} and the kids had a blast making {and tasting} this super easy infused water along with popcorn cakes topped with peanut butter, and the rest of the strawberries {sliced}. To make: Slice tops off strawberries, and place in a carafe or jar along with some sliced lemons {oranges or limes would be yummy too}. Top w/ fresh filtered water and allow to infuse for at least 2-3 hours or longer. Store in refrigerator for up to 3 days. Cheers!

Another new obsession…CB’s Peanuts, Roasted in the Shell. Have you ever tried finding in-shell peanuts in the store before? I hadn’t had much luck until I found these last week at Jimbo’s in San Diego. These babies are lightly roasted and fun to eat. My kids and Mr. Spicy are loving this healthy snack too! Image source

    Say, I want to make a lot in one go…Will refrigerating just the water (sans the strawberries/lemon) prolong shelf life?

    But still, awesome idea! 🙂

    1. Thanks Katie! Great group of kids to teach, and I love how amazed they were that something “healthy” can be so delicious! I bet you’ll make pretty spiralized veggies even if your slicer isn’t high tech 🙂
