Last week I ate almost {gulp!} an entire pan of this Perfectly Roasted Asparagus. Super easy to make, it’s my latest healthy addiction 🙂

Perfectly Roasted Asparagus

The most delicious roasted asparagus, and so easy to make!

Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 6 servings

Ingredients

  • 1 bunch asparagus
  • 1 tbsp extra virgin olive oil
  • Salt and pepper, To taste

Instructions

  • Pre-heat oven to 400ºF.  While oven is heating, wash and dry asparagus.
  • Lay asparagus out on a rimmed baking sheet, and drizzle with extra virgin olive oil, then rub it in well. Sprinkle a liberal amount of sea salt and ground black pepper, and roast for 20-30 minutes.

Del Mar beach Cliffs. One of my favorite walks in San Diego!The weather this weekend was. Quite simply. Picture. Perfect. And, even better, after going to church with my family on Palm Sunday at St. Peters in Del Mar, I decided to forget about my to-do list, and take advantage of the gorgeous weather. My friend and I took our pups and walked a little over 4 miles {round-trip} in to Del Mar, and along the beach cliffs. The pups pooped out a little, so we stopped for water and a rest at Powerhouse Park, then made the journey back home. All-in-all it was a fabulous day!

Add a dose of sunshine to your life with some fresh flowers from Trader Joe's!A new Trader Joe’s open up last week not too far from my house, so in-between dropping off/picking up Big Tex at baseball practice, I had some time to kill, so I took SiSi and her friend to check out the new Trader Joe’s at The Village at Pacific Highlands Ranch. Of course the first thing to greet us in front of the store, was this glorious display of fresh potted flowers. How could I resist? Instant happiness for under 5 bucks!

  1. I would have absolutely no problem eating a whole pan of asparagus 😉 It’s hard NOT to do! Oh how I miss living in Cali with it’s perfect climate…living vicariously through you!

  2. I love asparagus and am so excited it’s asparagus season! I too can eat a whole tray of roasted asparagus. Doesn’t 30 minutes at 400 make them too wilted? I find I roast them for 8 minutes and they’re done! Just wondering!!

    1. Hi Jessica! Glad to know I’m in good company with my asparagus eating habits 🙂 30 minutes does make it crispy (when brushed with olive oil) which is how I love it, but I think it would be delicious cooked for less time too-will try your method! We had some on the grill the other night, and it turned out perfect as well. I don’t think you can go wrong w/ asparagus in any way, shape or form 🙂 Have a wonderful week!
