Super Easy Gluten Free Minestrone Soup


This easy gluten free minestrone soup is food for your body, mind, & soul!

Gather Your Ingredients

Gluten Free Pasta 2 tsp Olive Oil 1 Onion, finely chopped 2 cloves Garlic, minced Salt & Pepper  ~ 2 large Carrots ~ 2 Zucchini Italian Seasoning 1 can Cannellini Beans 1 large can Diced Tomatoes 32 oz Vegetable Broth

Feel free to swap with vegetables, beans, & seasonings of choice.

Cook gluten free pasta according to directions. Choose lentil or chickpea (Banza) pasta for extra protein & fiber!

Step No. 1

While pasta is cooking, heat olive oil in Dutch oven or stock pot on medium. Saute onion & garlic to soften. Season to taste with salt and pepper.

Add chopped carrots & zucchini to pot. Saute for ~2 minutes. Season to taste with Italian Seasoning.

Step No. 3

Add beans to pot with the sauteed vegetables.

Step No. 4

Pour diced tomatoes and vegetable broth into pot with vegetables and beans.

Step No. 5

Bring to a boil, then turn off heat and stir in cooked (drained) pasta. Season to taste w/ additional salt, pepper, & Italian seasoning.
