Happy New Year Friends~I hope you had a wonderful holiday season with your family and loved ones!
My family and I got just back from a trip to Hong Kong and Thailand this past Sunday, and I am still in total jet lag mode, recovering from a nasty stomach bug, and a cold.
When it rains it pours!
Still, I have zero complaints, as we had a fabulous time traveling not only with the 4 of us, but also my parents and my in-laws. It was truly a wonderful adventure, and so special to be able to travel with 3 generations.
That being said, my mind is total “mush” right now, so in lieu of writing a post, I decided to ask YOU what nutrition topics and recipes you are most interested in seeing on The Spicy RD Blog in 2018.

This picture was taken on the last day of our trip, in front of the Grand Palace in Bangkok. It is an incredible place to visit, especially the Wat (Temple) that contains the Emerald Buddha. It was super hot, humid, and crowded while we were there, not to mention we all needed a break from each other (yes-there really is too much togetherness), so I had to beg Mr. Spicy and the kids to have their pictures taken. I really love this photo though, because we’re all actually smiling 🙂
You see fruit stands EVERYWHERE in Thailand. This one was on the street in front of the beach not too far from where we stayed in Phuket. I’m pretty sure I ate my body weight in mango while we were there!
This is me and my new friend Dok Gaew (aka “Grandma”). Isn’t she a beauty? One of the highlights of the trip for me was visiting the Phuket Elephant Sanctuary, which provides refuge for elephants rescued from the logging industry in Thailand. Currently, they have 6 elephants who are very well cared for by the staff and volunteers at the sanctuary. Most of the tour is observational, however we did get to feed the elephants at the end. If you visit Phuket, I highly recommend a visit here! Note: Please do your research before visiting elephants in Thailand, as not all facilities provide the same level of ethical care for these magnificent creatures.
