It always surprises me when my most popular Instagram posts are pictures of what I have eaten that day!

Spring flowers in bloom…firey hued sunsets….spectacular scenery pics from the beach, the mountains, or somewhere in between…heck, even pictures of my sweet usually sweet kids…these may get a few likes from time to time, but in reality, it’s the foodie pics of what I ate that day that get all the glory.

It probably shouldn’t surprise me, especially because all my non-RD {Registered Dietitian} friends tend to be curious about what I eat, peering in to my grocery cart when I run in to them at the grocery store, or urging me to post photos on The Spicy RD of the huge plate of the Bailey’s BBQ Nachos I chowed down on recently on a weekend camping trip to Julian, thinking my readers would be shocked that I ate something like that. You’re not particularly shocked are you? I sure hope not! They were delicious, and I enjoyed every single bite, but, I also know that if I ate like that too often, I’d be suffering from chronic heartburn, and likely be napping every afternoon, so I don’t eat meals like that very often, but when I do, I absolutely enjoy them 100 %!

So when fellow SUPER COOL RD’s Kate Scarlata and Michaela Ballmann both tagged me recently to share my meals for What I Ate Wednesday Registered Dietitian Edition, I jumped at the chance.

Here you go….

Coffee! With a splash of Organic Valley Grass Milk.  EVERY morning. Usually 1 cup when I first wake up sometime between 6 and 6:30 am, and another, in a “to go” cup when I walk my son to school around 7:30. And, depending on the day, there may even be a third cup after that.

Coffee #WIAWRDNext up was breakfast after I got home from walking Big Tex to school. This morning I wanted to use up some sliced apples from the evening before, so I made one of my favorite smoothies, a Fresh Apple Pie Smoothie, and added almond butter and hemp hearts to it. Yum!

Apple Pie Smoothie #WIAWRDThe smoothie fueled me until about noon, when I decided to make a Turkey Grilled Cheese Reuben with some of the Cabot Farmhouse Reserve White Cheddar Cheese I received in honor of being on the Cabot Cheese Board, as well as to celebrate Grilled Cheese Month.  To tell the truth, I was never a fan of Reuben sandwiches growing up, but I created this yummy sandwich a few months ago when I decided to try getting more fermented foods in my diet, and discovered Farmhouse Culture Smoked Jalapeno Sauerkraut. Here’s how you do it…Place cheese and turkey between two slices of bread {gluten-free for me} and grill until cheese in melted.  Separate bread slices carefully, and stuff with lots of sauerkraut.  Serve with veggies {more leftovers from last nights dinner} and a glass of sparkling water on the side. Double yum!

Gluten-Free Grilled Cheese Reuben #WIAWRDOh, and I can’t forget about the 2 triangles of Toblerone Chocolate I had right after lunch.  Big Tex shared it with me from his Easter Basket.  How could I say no???

Toblerone Chocolate #WIAWRDAfter enjoying my lunch and chocolate, I made a cup of green tea to take down to my office with me while I worked.  Although I don’t have green tea every day, I usually have 1-3 cups several times a week, both for the health benefits, plus I really do like the taste, and find it very soothing and de-stressing. Ahh….

Green Tea #WIAWRDNext, around 3:30, which is when I usually have an afternoon snack to get me through helping the kids with homework and playing chauffeur to and from sports practices, I spread some almond butter on top of a corn cake and topped it off with fresh sliced strawberries.  Absolutely delicious, and just filling enough to keep me going until dinner time.

Corn Cake with Almond Butter and Strawberries #WIAWRDMy afternoon snack was followed by a walk, then watching Big Tex’s baseball game.  Since I knew the game wouldn’t be over until 7, I had already planned that we would go out to dinner that night, so after the game was over, I drove home to pick up SiSi so we could go meet Mr. Spicy and Big Tex at a local Mexican restaurant, Casa Sol y Mar, for dinner.  Upon my arrival home, my usually sweet daughter was having a very pre-teen mood swing, so I ended up texting my hubby this…

Text Message #WIAWRDAs you might have guessed, this was waiting for me at the restaurant when we got there…

Margarita #WIAWRDAnd since I ordered the margarita, I decided to forgo the chips that were making their presence known on the table, and just go straight for dinner, Chilies Poblanos stuffed with grilled chicken, sauteed veggies, salsa verde, and Monterey Jack cheese.  I enjoyed most of the chili peppers plus the black beans on the side, and was ready to call it an evening, go home, put my flannel jammies on, and watch one of the final episodes of Breaking Bad. I just have 3 episodes left to go!

    1. As you might imagine Regan, that margarita really hit the spot 🙂 And the Grilled Cheese Reuben was delicious! I use a variety of different gluten-free breads, Rudis, Udis, Canyon bakehouse, but the one I have been using a lot lately comes from a local Bakery, Deanna’s Gluten Free which I like b/c of the simple ingredient list!
