Although I personally do not discriminate where ice cream is concerned, I know a lot of you, along with many of my clients don’t consume dairy products for a variety of reasons, ranging from IBS and lactose intolerance to milk allergies, and everything in between. This yummy vegan, gluten-free ice cream is perfect for all of us!
On a personal note, Big Tex was recently getting a lot of stomach cramps, so I suggested he try going dairy-free for a week to see if milk/lactose was the culprit, especially since I had noticed he had been drinking A LOT of milk lately.
By a lot, I mean multiple, ginormous glasses of milk at one sitting, as you might expect from a 14-year-old teenage boy growing like a weed!
And, while I hate to say, “I told you so” {and Big Tex hates to hear it!}, I didn’t hear one, single, solitary complaint of a stomach ache during his dairy-free week, so now he’s experimenting with drinking less milk, plus I’m regularly buying A2 Milk, which he seems to tolerate better than regular cow’s milk.
In addition, low lactose cheeses and single servings of Greek yogurt don’t appear to upset his stomach, so I do think portion control is key here. Isn’t it always???
But, naturally, the thing he craved the most that week, was ice cream, so this vegan gluten-free ice cream with my yummy Cinnamon Raisin Pecan Oatmeal Cookie Dough Bites was the perfect dairy-free treat.
This Creamy Oatmeal Cookie Dough Ice Cream is so easy to make…
You start by making a batch of these Quick and Easy Cinnamon Raisin Pecan Oatmeal Cookies Dough Bites, then make the coconut milk-based ice cream in your ice cream maker, and finally, you toss in chunks of the cookie dough bites, for a decadent, yet delicious frozen treat. Let’s enjoy a scoop {or 2} together!
Oatmeal Cookie Dough Vegan Gluten Free Ice Cream
This creamy vegan gluten free ice cream loaded w/ cinnamon raisin pecan cookie dough, is so delicious & decadent, you’d never believe it’s a healthy treat!
Combine coconut milk, sugar, and cinnamon in a blender and mix until smooth.
Chill coconut milk mixture in refrigerator for 30 minutes.
Make ice cream following manufacturer’s directions for your ice cream maker. Note: I used a Cuisinart and got soft serve consistency ice cream after 20 minutes.
Mix cookie dough chunks in to ice cream. Place ice cream mixture in glass container, and place in freezer until desired consistency is achieved.
Notes
Low FODMAP Notes: Large servings of raisins and oats are high in FODMAPs, so stick to 1 serving for a low FODMAP treat.
The Oatmeal Cookie Dough Bites can be made ahead of time, and stored in the refrigerator or freezer.
The Ice Cream mixture can be made ahead of time, and stored, well covered, in the refrigerator for up to 3 days.
