It’s hard for me to believe, but The Spicy RD Blog is 1 year old today!

And, honestly, I wouldn’t have kept up The Spicy RD blog this past year without the support, encouragement, comments, and most especially shared laughs with all of you, my awesome readers, so THANK YOU from the bottom {and top :-)} of my heart! You guys ROCK!

And, what better way to celebrate my 1 year blogoversary, than with a healthy-ish cocktail!

Not just any cocktail mind you, but one that’s got a hint of spice, like fresh ginger.

Spicy Apple Gingertini

This Spicy Apple Gingertini is an easy and delicious cocktail or mocktail for the holidays!

Ingredients

Ginger Apple Juice

  • 2 cups apple cider, or apple juice
  • 4 ounces fresh ginger, sliced

Spicy Apple Gingertini

  • 7 ounces Ginger Apple Juice, recipe above
  • 4 ounces vodka, chilled
  • Ice
  • Fresh apple slices for garnish

Instructions

Make the Ginger Apple Juice

  • Combine apple juice/cider and ginger in a pan and heat on high until boiling.  Turn down heat to low and simmer for 15 minutes.  Cool juice in fridge before making drinks.

Make the Spicy Apple Gingertinis

  • Combine ginger apple juice and vodka in a cocktail shaker with ice. Shake well to combine, then strain and divide into 2 martini glasses. Garnish with fresh apple slices if desired.

Notes

Make it a mocktail!

Omit vodka. Pour Ginger Apple Juice into  martini glasses, and top off with sparkling water.
