Got peaches? Got ginger? Whip up a batch of Ginger Peach Frozen Yogurt, then top it off with peach juice and sparkling water for a delicious summertime treat~a Gingery Peach Float!
Inspired by these…
and this…
I decided to do a twist on a summertime favorite, the ice cream float for this month’s Recipe ReDux, “Beverages”.
To “healthify” it a little, I swapped out the ice cream for homemade frozen yogurt {complete with good buggies for your GI tract}, and subbed in sparkling water and juice for the usual soda.
The result?
A seriously delicious and refreshing treat for a hot summertime day!
Here’s my concoction…
Summertime Gingery Peach Float & Frozen Yogurt
Ingredients
GINGER PEACH FROZEN YOGURT
- 2 cups whole milk
- 1 cup whole milk yogurt , unsweetened, use low fat yogurt if desired
- 1/2 cup fresh ginger, thinly sliced
- 4 whole fresh peaches, pitted, skinned and cut into chunks
- 3/4 cup sugar
- Pinch salt
GINGER PEACH FLOAT
- 2 scoops Ginger Peach Frozen Yogurt {above}
- 1/2 cup peach juice
- 1/2 cup sparkling water, i.e. Ayala Ginger Lemon Peel Sparkling Water
Instructions
- To make the frozen yogurt: Combine the milk and sliced ginger in a saucepan and heat until almost boiling, then reduce the heat and simmer for about 20 minutes. Pour milk and ginger over strainer in to a blender.
- Add the yogurt, chopped peaches, sugar, and pinch of salt to the blender and combine until smooth.
- Place mixture in refrigerator until cool.
- Follow manual per ice cream maker instructions. I used a Cuisinart Ice -20 and after 20 minutes, my frozen yogurt was soft serve consistency. I transferred it to the freezer for 2hours for a firmer consistency for the float.
- To make the float: Scoop ice cream in to glass and top with peach juice and sparkling water.
