What do you make when you’ve got overripe fresh peaches, Greek yogurt, frozen mango, and, drumroll please….frozen lentils??? This scrumptious, protein packed, Ginger Peach Lassi. Yum! Here’s how to make your own…
Ginger Peach Mango Lassi
Ingredients
- 1/2 cup almond milk, or other non-dairy or dairy milk
- 1/2 cup plain Greek yogurt
- 1 cup frozen mango
- 1/2 cup frozen lentils
- 1 peach, extra ripe, pit removed
- 1/2 teaspoon ground ginger
- pinch salt
Instructions
- Place all ingredients in a blender. Blend on high power until creamy

HAPPY THING NO. 2 | A WELL STOCKED {ORGANIZED!} REFRIGERATOR
Happiness is a well-stocked refrigerator! I loaded up on groceries last week after our family trip to St. Lucia, and even took some time to organize my fridge too. Want your kids to eat more fruit? Here’s a tip…place it front and center where everyone can see it. Trust me. it works!
HAPPY THING NO. 3 | HIKING TO THE TOP OF MT WOODSON + POTATO CHIP
This past April I told SiSi and her friend I would take them to the popular hiking spot, Potato Chip Rock, to snap an Instagram pic. I had done the hike before, and was sure I knew what I was doing. I told them it would be ~ 6 miles. It was. And the views would be fabulous. They were. And that Potato Chip Rock was at the top of Iron Mountain. It wasn’t. Oops! Somehow I got my trails mixed up, and went to the top of the wrong mountain. Double oops! So I promised them we would try again. Which we did. And we took Big Tex and his friends too. {Photos above} If you love to hike, and are in San Diego, Mt Woodson {~8 miles round trip} is a must do. And, so is Iron Mountain. You should do them both. 🙂
HAPPY THING NO. 4 | MEXICAN SORGHUM VEGGIE POWER BOWL
Not only is a well-stocked fridge one of my happy things, so is using up the leftovers in my fridge, so food doesn’t go to waste. This “Clean Out The Fridge” Mexican Sorghum Salad I made for lunch the other day was absolutely delicious!

PROTEIN POWERED BREAKFAST BAGEL: 1 toasted bagel + 1/2 avocado spread on top + 1/2 cup cottage cheese + 2 extra thick and juicy heirloom tomato slices + 1 tablespoon hemp seeds. Eat. Repeat the next day!!!
