Food Bloggers Virtual New Year’s Eve and My 12 Favorite Recipes from 2011!

Happy New Year’s Eve my friends! {Or, for those of you reading this in 2012, Happy New Years!!!}

What better way to celebrate the new year, than with a party???

{A huge thank you to Lora from Cake Duchess, and Sanjeeta from LiteBite for hosting this virtual party…to Junia from Mis Pensamientos for coordinating the partiers…and to Heather from Farmgirl Gourmet for her lovely and festive logo design!}

So what will we be serving at this party you may be asking???

Why a bit of champagne the bubbly, of course, and for those of you not imbibing, perhaps a glass or two of my Mocktail Spicy Apple Gingertini.

And to go along with the libations, we’re sharing our favorite recipes from 2011.

In light of the 12 months of the year, I’ve picked my own personal favorites, one for each month.

Some sweet and indulgent, but most on the lighter side, as I don’t know about all of you, but I’ve had a wee bit more sweets this past month than I normally do.

Just being honest here 🙂

January 2011: Homemade Applesauce with Mulling Spices {Big Tex, my applesauce lover, had a blast making this with me.  We love it a little bit on the chunky side.}

February 2011: Super Easy, Super Cheesy Super Bowl Toast {It was a toss up between this and my Chicken and Veggie Stir-Fried Rice, but this photo just makes me smile-thanks for being such a good sport SiSi :-)}

March 2011: Coconut Flour Pancakes with Pecans and Raspberries {Yum!}

April 2011: Big Tex’s Vanilla Birthday Cake with Whipped Cream and Strawberries {Big Tex loved his cake so much that I didn’t have time to take photos of the uneaten cake.  This has since become my “go-to” gluten-free vanilla cake.  For Christmas dinner, I made a Blum’s Coffee Crunch Cake using this cake, whipped cream, and this recipe for Coffee Crunch.  I think it has become my dads new favorite cake -after my mom’s angel food cake of course!}

May 2011: Amazingly Addictive Artichoke Squares {Not only a favorite of mine, but I’ve loved hearing back from many of you about how much you have enjoyed these delectable cheesey egg and artichoke bites, perfect for any meal or snack.  Make a big bunch and freeze them for later!}

June 2011: Decadent Dark Chocolate Muesli {A healthy way to start the day, and I promise not to tell anyone if you drink the “cocoa milk” straight from the bowl when you’re done with your cereal :-)}

July 2011: Ginger Peach Frozen Yogurt and Gingery Peach Float {A tough month for me to pick a favorite, but I was really happy how my first experiment with my new ice cream maker turned out!}

August 2011: Cilantro, Tomato, and Green Onion Baked Eggs {Baked for my Twitter friend Patti of Easton Place Designs, this egg dish has become a healthy and easy favorite dish of mine to start the morning with.}

September 2011: Apple Cinnamon Oatmeal Crisp {The perfect way to celebrate fall…I kept the sugar to a minimum in this recipe and it still tasted delicious.  You can even make a breakfast out of it by serving with Greek Yogurt.  Yum!}

October 2011: Pumpkin Pesto Bruschetta {This is a favorite of mine, because it was a total experimentation for the Recipe ReDux.  The combo of fresh pureed pumpkin, homemade pesto, and tangy goat cheese turned out to be quite remarkable-even my husband agreed :-)}

November 2011: Pumpkin Spice Cupcakes with Maple Buttercream Frosting {Made with teff, these cupcakes were another Recipe ReDux experiment that turned out to be delicious.  Yes, the maple buttercream frosting is on the indulgent side, but you can serve without and call them “muffins” for a lighter, less decadent version :-)}

December 2011: Homemade Chocolate Lollipops {Making these with SiSi and her friend was a fun “school vacation” project.  Big Tex was supposed to help, but somehow never made it to the kitchen, other than to eat them, that day.  I’m not much of a “crafty” person, but these were so easy to make, and if you think about it, the dark chocolate version with nuts and dried fruit is actually kind of healthy for you :-)}

  2. What a gorgeous and delicious round-up of recipes. I LOVE those artichoke squares (need to make them asap), and the cheesy toast photo is priceless..a true ‘cheesehead’, so cute! That said..I’m sure the tuiles could easily be made gluten-free. Please let me know if and when you get to it! Glad to have taken part in #Welcome2012 with you! Happy New Year to you and your loved ones!!
