Deliciously Decadent! Bailey’s Chocolate Covered Irish Cream Cheesecake

Here’s how it all started…

“And …I said YESSSSS!”
It happened one November midnight, in Twitterverse, we saw this tweet from our dear Nelly @nella22. Without missing a beat, we all knew Nelly had “said YES” to her beloved “M”,as she sweetly calls Brian Murray, her fiancé. So here we are,Nelly dear, your friends in the food world, wishing you and Brian, all the best.
In honor of Nelly and Brian’s big day, I knew I had to make something fun and decadent to eat, as I suspect that is the way Nelly, a super fun, and dare I say decadent lady herself, would want to celebrate.
I racked my brains trying to come up with the perfect dish to bring to the bridal shower, when finally it came to me…

Baileys Irish Cream Cheesecake!

This is the very same cheesecake I made for my best friend at her bridal shower several years ago, and it’s the same cheesecake I’ve come back to again and again because it is just.so.good.



The original recipe comes from Bon Appetit magazine, and I have adapted it to be gluten-free {so I can enjoy a slice with Nelly} and include a chocolate crust {because every bride should enjoy a little extra chocolate at her shower!}

Bailey’s Irish Cream Chocolate Covered Cheesecake {Original and Gluten-Free}


Preheat oven to 350 degrees.  Finely grind cookies in food processor. Add melted butter and process until well combined.  Press crumb mixture onto the bottom of a 9 inch springform pan.  Bake crust for 12 minutes, then remove from oven to cool.


  • 3 8 ounces packages cream cheese, room temperature
  • 7 tablespoons sugar
  • 1 tablespoon all purpose flour {I used 1 tablespoon sorghum flour for my gluten-free version}
  • 2 large eggs
  • 1/4 cup plus 2 tablespoons Greek Yogurt {I used 2 %}
  • 1/4 cup plus 2 tablespoons Bailey’s Original Irish Cream liqueur
  • 1 teaspoon vanilla extract

Combine cream cheese and sugar in a large bowl with an electric mixer until smooth.  Beat in flour.  Add eggs one at a time, beating until just combined.  Mix in remaining ingredients.  Bake 10 minutes at 350 degrees, then lower heat to 250 degrees and bake for 30 more minutes, or until cheesecake is done.  Cool and refrigerate.


  • 1/2 cup whipping cream
  • 9 ounces semisweet chocolate, chopped

Heat cream in saucepan until simmering.  Reduce heat to low and add in chopped chocolate.  Stir until melted and smooth.  Cool glaze to lukewarm.

Release pan sides from cheesecake and place it on a baking sheet or large plate.  Spread glaze on top and on the sides of the cheesecake, allowing excess to drip on to baking sheet or plate.  Refrigerate until glaze is set, approximately 30 minutes.

  10. Your photos are gorgeous! For my bridal shower, I thought I was going to a work picnic. I knew there would be volleyball and other games so I wore a t-shirt, shorts and sneakers. Imagine my surprise when I stopped to pick up a friend and everyone yelled “surprise!” The other guests were all dressed up, of course. Oh well, I’ve always been a tomboy anyway 🙂
