Weekly Menu Plan and Photo Fun: Sweet Potato Skins and Cowgirl Time!

How was everyone’s Mother’s Day Weekend???

Mine was a blast {except for the lack of sleep that comes with spending the night in a cabin with 11 giggly 9-11 year old girls.  But that’s to be expected, right???}

Our “digs” for the weekend…

I spent the weekend roughing it at Rawhide Ranch with 15 amazing young ladies/women from my daughter’s Girl Scout troop, a barnyard full of horses, several pens full of chickens/sheep/goats {you can read more here about my love of goats :-)}, and 1 sweet cow named Pablo.

I also rode bareback on a horse for the first time ever {very cool!}, and delighted in watching SiSi and her friends rake up horse poop while us moms sat back and relaxed :-)

All, in all, it was a wonderful weekend…

DAY ONE

  • Healthy Sweet Potato Skins from Pinch of Yum
  • Greek Yogurt
  • Green Salad with lettuce, cucumber, avocado, and tomato.
  • Apple slices with cinnamon

DAY FOUR

  • Scrambled Eggs with spinach, sweet onion, and feta
  • Brazilian Cheese Rolls , AKA “The Best Rolls Ever” from The Spicy RD
  • Fresh mango

And if you are having a love-in with your veggies just now – I am – live on the edge and whack some oil-slicked sweet cherry tomatoes into a hot oven for a delicious pop of colour and extra flavour.

  2. I love your photos of the goats! Years ago I was lucky enough to hold a newborn kid while children all huddled around me to pet it. It was amazingly docile and so sweet. I also LOVE you weekly menu plan. What a fabulous idea to both do and post about. And thanks so much for adding my swiss chard recipe onto your menu. I’m making it again tonight here too!

    • Hah! I’m organized enough to make my menu plan, but, you would think otherwise about me, if you could see all the piles of unfolded clothes and paperwork to do at my house :-)

  6. I have stayed at several horse ranches. I was a horse-crazy child and “barn rat” growing up and now live vicariously through my sister who is a trainer and athlete in the equestrian sport of eventing. I prefer to ride bareback and feel the warmth and movement of the horse…plus it is a killer leg workout going sans saddle and stirrups!

  12. Wow I love how you do meal planning.. totally opposite of me, wish I’m more organised. I tried it for 1 week, but ended up only following 50% of it.. :P

    • Hi Shannon! So glad you stopped by to check out my weekly menu plan :-) I find it so helpful to plan out my meals, but there are definitely times I don’t always follow them, especially when there are delicious leftovers involved for the next day!
