I love your photos of the goats! Years ago I was lucky enough to hold a newborn kid while children all huddled around me to pet it. It was amazingly docile and so sweet. I also LOVE you weekly menu plan. What a fabulous idea to both do and post about. And thanks so much for adding my swiss chard recipe onto your menu. I’m making it again tonight here too!

Thanks Susan! I love your goat story, and I can’t wait to make your Pasta with swiss chard and ricotta. Thanks for the inspiration :-)

Hah! I’m organized enough to make my menu plan, but, you would think otherwise about me, if you could see all the piles of unfolded clothes and paperwork to do at my house :-)

I have stayed at several horse ranches. I was a horse-crazy child and “barn rat” growing up and now live vicariously through my sister who is a trainer and athlete in the equestrian sport of eventing. I prefer to ride bareback and feel the warmth and movement of the horse…plus it is a killer leg workout going sans saddle and stirrups!

Ooo…I think I’m in trouble now, and that my daughter is going to become “horse crazy” too :-) I can imagine bare back riding being a great leg workout!!

Favorite farm animal, funny question. I’m going with the horses though I like pigs from afar. You’re a good woman to sleep in that cabin for mother’s day.

Wow I love how you do meal planning.. totally opposite of me, wish I’m more organised. I tried it for 1 week, but ended up only following 50% of it.. 😛

Hi Shannon! So glad you stopped by to check out my weekly menu plan :-) I find it so helpful to plan out my meals, but there are definitely times I don’t always follow them, especially when there are delicious leftovers involved for the next day!

OMG, I loved those girl scout camps! My daughter is 20 now – actually moving out in a couple weeks, I’ll have to pull out our pictures from back then.

    Love your menu! 😀
