Weekly Menu Plan and a Few of my Happy Things {Orange Pedicure Anyone?}

orange pedicure instagramHappy Thing #1: Shiny orange tootsies!
Route 66 signsHappy Thing #2: Having fun with Instagram.

Mickey Mouse Ferris Wheel at California Adventures

Happy Thing #3: Spending time with my family at Disneyland and California Adventures, and conquering my fear of the Tower of Terror {SiSi was kind and held my hand :-)} P.S. The World of Color Show at California Adventure is spectacular-highly recommend!

Kale Caesar Salad

Happy Thing #4: Convincing my family and friends that kale is not only super healthy, but DELICIOUS as well.  I served my Kale Caesar Salad at a dinner party last night, and there was not a speck left on anyone’s plate {and, no, the dog was not hiding under the table to eat any “oops, this fell on the floor” scraps!} I also served this yummy Greek Pastisio from Jennifer Vagios, aka The Yonut, and it was a huge hit~Another highly recommend!

Julie's Organic Ice Cream Sandwiches

Happy Thing #5: Julie’s Organic {Gluten-Free} Ice Cream Sandwiches.  SiSi loves chocolate and vanilla.  Big Tex loves vanilla and lemon.  Me?  I love ’em both!  How can ice cream and cookies NOT make you happy???

And, now on to my weekly dinner menu plan

As always, you can also find my weekly menu plan here on Pinterest.  Even though I don’t post my menu’s on my blog every week, I’m pretty good about posting them weekly on Pinterest.
Before I go, I want to give a BIG thank you to Shari of My Judy the Foodie and Ayla Withee of Eat Simply for nominating me recently for the Versatile Blogger Award.  I hope you will check out both of their delicious blogs, and if you want to learn 7 random things about me {in case you did not already know} check out  this past post for a little FYI 🙂

  1. Love your glam tootsies! I normally opt for a metallic dark blue (DIY version) but your orange ones look fab with your cute flip flops. Flip flops haven’t made it out of the closet though… Like this weeks menu & have already clicked on a couple of links. Have a healthy happy week,EA.

    • Mine is totally a do it yourself version too Kellie 🙂 Dark metallic blue sounds like a fab choice, but, my toes were screaming for orange last week. Hope you have a happy healthy week too!!

  2. Love the orange toes!! ORange is definitely the in-color this season, and it’s great too because it just so happens to be the main color in my wedding 🙂

I’m excited to check out these cucumber avocado summer rolls!

  3. I may have to try that kale Caesar salad – I’ve tried it a number of ways to get my husband to eat it and haven’t found a good way yet.

I wish I could wear orange – looks terrible on me!

    • Ann, if my non-veggie eating mom eats it, I bet your husband would eat it too 🙂 P.S. I can’t wear orange clothes either, but on the toes it looks divine!

  4. Your menu plan sounds absolutely delicious! I’m going to check out that Grilled Potato & Zucchini Caprese Salad–I love grilled potatoes. 🙂

  5. Ice cream sandwiches are one of the greatest desserts there is! Lately I have been using a Turquoise-ish color for my toes!

  6. So many great ideas! Thanks for the inspiration. My husband is going to be pretty excited when I make that pad see-ew; it’s his favorite. Love the orange toes, too (mine are a shade of blue called “Sky’s the Limit” right now). Summer is the perfect time to rock fun colors.

  7. My fav summer toe color is Cajun Shrimp by OPI…every year I kick off the season with a pedi and that color! Happy feet make a happy mom! 🙂 Those ice cream sandwiches look DIVINE!!! I would be all over a whole tube! 😉 I’m glad you liked the salsa verde burger, was a hit here too. I love your weekly posts, so cool you do that! Happy rest of your week!

    • Cajun shrimp toes? Sounds like a gorgeous shade of reddish, orangish, pink-must check that out! Your turkey burgers were delcious Teri. I find most Versions too dry, but the addition of salsa and egg really moistened these up. I hope you’re having a wonderful week too!

  8. love seeing your happy things + your menu looks fantastic this week. can’t wait to hear how everything turns out, especially the pad see ew – i’ve never tried making it at home before!

  9. Thank you for the dinner inspiration – just made the Pad See-Ew with zucchini (tis the season!) and shrimp – delish!! Love the orange tootsies and let me know how you like that Caprese Salad. Just got MORE zucchini, tomatoes & potatoes in this week’s CSA share – need to fire up the grill again 🙂

  10. Love those Julies too, as you know. Great menu. Without the kids I’m not menu planning, feels so weird.

  11. Orange toenails are my favorite! Great job on the kale salad, too. My kids would never go for it 🙁

  12. Love your toes!! Too fun!
I have never been on the tower of terror so you are braver than me! Glad you had a great time. I love Disneyland and am crossing my fingers I can go soon! 🙂

  13. Love the orange toes….it has been my go-to toenail color this summer too! Love the focus on ‘happy things’! I am presently reading The How of Happiness–a great read. I actually LOVE the tower of terror even though it scares the heck out of me! Hope you are enjoying your summer–it sure sounds like it!

  14. orange is must this season! love the weekly plan. i never plan my week, but lately with too many summer event,s i think i should

  15. I love your happy things…especially the orange toenails 🙂 And after reading your menus, you might just find me at your door at dinner time…such great ideas!!!

  16. Did I ever tell you I got to do quality assurance special project in Disneyland and California Adventures? It is still a project I can’t stop talking about, one of the best times of my life! I agree, it is a happy place for sure:-) I love those ice cream sandwiches, they sound delicious:-) Hugs, Terra

  17. People are still linking to our site from your mention of our Caprese salad! Thanks! BTW, I have orange toes now too. So sunny. And even at 8 months pregnant…I painted them myself. (Cuz the babysitter for the pedicure cancelled!)

  18. Julie Denner says:

Thanks for sharing your favorite things – the orange pedicure is something that tickled my fantasy. Anyway, keep on posting. Your stuff is definitely something to read and wait for.

  19. Hey would you mind letting me know which webhost you’re working with?
I’ve loaded your blog in 3 completely different browsers and I must
say this blog loads a lot faster then most. Can you recommend a good internet hosting provider at a reasonable price?
Thanks a lot, I appreciate it!
