Happy Thing #3: Spending time with my family at Disneyland and California Adventures, and conquering my fear of the Tower of Terror {SiSi was kind and held my hand Happy Thing #4: Convincing my family and friends that kale is not only super healthy, but DELICIOUS as well. I served my Kale Caesar Salad at a dinner party last night, and there was not a speck left on anyone’s plate {and, no, the dog was not hiding under the table to eat any “oops, this fell on the floor” scraps!} I also served this yummy Greek Pastisio from Jennifer Vagios, aka The Yonut, and it was a huge hit~Another highly recommend!
Happy Thing #5: Julie’s Organic {Gluten-Free} Ice Cream Sandwiches. SiSi loves chocolate and vanilla. Big Tex loves vanilla and lemon. Me? I love ‘em both! How can ice cream and cookies NOT make you happy???
And, now on to my weekly dinner menu plan…

- Shredded Carrots and Purple Cabbage

Love your glam tootsies! I normally opt for a metallic dark blue (DIY version) but your orange ones look fab with your cute flip flops. Flip flops haven’t made it out of the closet though… Like this weeks menu & have already clicked on a couple of links. Have a healthy happy week,EA.

I may have to try that kale Caesar salad – I’ve tried it a number of ways to get my husband to eat it and haven’t found a good way yet.

Ice cream sandwiches are one of the greatest desserts there is! Lately I have been using a Turquoise-ish color for my toes!

My fav summer toe color is Cajun Shrimp by OPI…every year I kick off the season with a pedi and that color! Happy feet make a happy mom!

Cajun shrimp toes? Sounds like a gorgeous shade of reddish, orangish, pink-must check that out! Your turkey burgers were delcious Teri. I find most Versions too dry, but the addition of salsa and egg really moistened these up. I hope you’re having a wonderful week too!

Did I ever tell you I got to do quality assurance special project in Disneyland and California Adventures? It is still a project I can’t stop talking about, one of the best times of my life!
