HAPPY THING #1 ~ Hilary’s Veggie Burgers

I owe a huge thanks to Lauren at Foodtrainers for turning me on to Hilary’s Veggie Burgers! Gluten-Free, vegan, and GMO free, these veggie burgers are da’ bomb!  Seriously!  I found mine at Jimbo’s in San Diego, but you can click here to find a store near you.  So far I have tried the Original World’s Best Veggie Burger and the Adzuki Bean Burger, and I can’t wait to try more.  They are delicious topped with sliced tomatoes and avocado, but I can imagine them topped with all sorts of yummy things….hummus, sprouts, microgreens, this Pistachio Harissa Pesto, this Kale Pesto, or this Spicy Cranberry Squash Chutney.  What would you top yours with???

HAPPY THING #2 ~ Ayala’s Herbal Ice Tea

Ayalyas Herbal Ice Tea // The Spicy RDI have shared my love of Ayala’s Herbal Water with you before…Gingery Peach Float, Spicy Apple Gingertini, Cantaloupe Mint Sparkler anyone?…so I was thrilled when Dr. Ayala offered to send me some of her new Herbal Iced Teas to try.  Made with purified water and organic herbs and spices, Ayala’s Herbal Teas are a delicious way to stay well hydrated without any artificial sweeteners.  My favorites are the Peppermint Melissa Spearmint and the Rooibos Cinnmon Rose Petal, but the Chamomile Bergamot Vanilla, and Nutmeg Cacao Cardamon are delicious as well.  You can learn more about Ayala’s Herbal Teas and find out where to buy them here! {Note: I received free samples of Ayala’s Herbal Water to try.  As always, my opinions are 100 % my own.}

HAPPY THING #3: A Gluten-Free Halloween Celebration with Kid Start Wellness

Kid Start Wellness Halloween Party // The Spicy RDI had such a fun afternoon a couple of Sunday’s ago, hanging out with a FABULOUS group of kids at the first Kid Start Wellness Halloween Party in San Diego!  We had a great time talking about gluten-free diets and the kids got to take my gluten-free quiz for a chance to win some really cool prizes, plus there were lots of gluten-free vendors on hand to ensure that these kids with celiac disease or non-celiac gluten sensitivity could have a fun AND safe gluten-free Halloween celebration. I am honored to be working with this amazing organization started by two energetic and dedicated  women, Julie and Deanna.  For those of you not familiar with Kid Start Wellness, it is a non-profit organization in San Diego with the mission to support, educate, and empower knowledgeable and independent kids in their strictly gluten-free lifestyle. HAPPY THING #4: A Deliciously Healthy & Simple Lunch

Baked Sweet Potato with Greek Yogurt & Feta Cheese // The Spicy RDIf you read some of my recent California Sweetpotato posts {California Sweetpotato Hash, Peanut Butter Sweetpotato Cookies}, you may be mumbling something to the effect of Ok, Ok Spicy, I get that you like sweetpotatoes, but can we please move on to something else?!!!  I hear ya’.  I really do!  But, can you really resist this SUPER SIMPLE meal idea {you could eat this for any meal!} consisting of a baked {microwaving works fine too!} sweet potato topped with plain Greek Yogurt and Feta Cheese???  Oh, now I’m thinking toasted pine nuts would be another great topping!!! Ok, I’m done talking sweetpotatoes.  At least for today :-)

HAPPY THING #5: My Favorite Hiking Spot

Torrey Pines Reserve // The Spicy RDLast but not least…Generally speaking, I am not a creature of habit, but there are a few things in my life I could never do without…My family & friends, coffee, hot bubble baths, and hiking at Torrey Pines Reserve in San Diego.  I have many favorite hiking spots, along with many more to do on my hiking bucket list, but, luckily, one of my all time favorite hikes is only a few miles from where I live. What I love most about Torrey Pines {besides the fact that you can get a good hill workout in, and there is a good chance you will spot some dolphins frolicking with the surfers in the Pacific Ocean}, is that you will always see loads of families, friends, and people of all ages outside getting fit. Makes me very happy indeed :-)

  4. First of all congratulations to you and Mr Spicy! 14 years is a big deal in this day and age. I am much older, and we are on 25 years in December, so I know how awesome getting to 14 years is. Raising my glass of Spanish Albarino for another 14! Thanks so much EA for finding my blast from the past butternut squash and spinach lasagne recipe. You must have been rootling through my Index for that golden oldie with the bad, off-putting pix. Brave you! But I hope you enjoy it – I make it for my nutrition groups and it always gets scarfed up. I am going to have to check out Jeanette’s Cincinatti chilli – intrigued! PS Sweet potatoes with yogurt and feta is awesome btw.One can never have enough sweet potato recipes – such a versatile spud!

  7. Oh YUM, sweet potato with greek yogurt and feta?? Brilliant, I tell you!
    We have a local company called Luna here in COlumbus, and they make the best veggie burgers (some are gluten free, but they are all vegan and locally sourced). I’m addicted, even though, of course, they contain tons of FODMAPs.

    Congrats to your and your husband! 14 years? Amazing. And many more to come!

  8. Aww Happy 14 yr anniversary to you both! I’ve never heard of Hilary’s veggie burgers but they must be fantastic if Mr. Bite has to be on the look-out ;). I wish I could hike more often. One of my favorite vacation trips was visiting Sedona and hiking more than 20 of the awesome trails.
