  • Lemon Zucchini Pasta from Oh My Veggies {Making with gluten-free pasta}
  • Cherry Tomatoes
  • Salad {with lettuce from my garden!}
  • Fresh strawberries


  • Chinese Fried Rice {with chicken instead of shrimp} from Jeanette’s Healthy Living
  • Steamed broccoli
  • Fresh oranges

My Happy Things

Coast to Crest Trail, Del Mar, CA//The Spicy RDHappy Thing 1: Getting 12,000 + steps in before noon on the Coast to Crest trail.  There are so many great hikes around San Diego, and it’s always fun to find a new one, especially when it’s almost right in my backyard!  My friend and I saddled up the dogs, and hiked from our neighborhood through Crest Canyon over to The Del Mar Fairgrounds where we picked up the Coast to Crest Trail, which takes you alongside the San Dieguito lagoon and passes by the Del Mar Horse Park and the San Dieguito River.  This is a great opportunity to see coastal California wildlife, and beautiful spring flowers in bloom, including my favorite California poppies. I can’t wait to bring the kids back here this summer for bike rides!

Kale//The Spicy RDHappy Thing 2: Making my favorite Kale Frosty with fresh kale right out of my rooftop garden.  The best!

CSA Veggies//The Spicy RDHappy Thing 3: CSA veggies! My friend and her family went out of town last week, and I was the lucky recipient of their CSA veggies and fruit from Be Wise Ranch.  This weeks menu plan was based on all my delicious loot which included carrots, lettuce, kale, fennel, zucchini, rosemary, cabbage, oranges, strawberries, and more.  Thank you Brooke!!!

Orange Tree blossoms//The Spicy RDHappy Thing 3: A brand new valencia orange tree to plant in my garden!  Mr. Spicy and I picked up this gorgeous tree over the weekend, and it smells absolutely divine!  Can you see all the blossoms???  That mean lots and lots of oranges!!!!

French Toast with Peanut Butter Sauce and Bananas Foster//The Spicy RDHappy Thing 5: A birthday celebration fit for a king…My sweet boy, Big Tex, turned double digits this past Friday, and we had a blast celebrating!  We started the day off with French Toast topped with Bananas Foster per his request, and I even whipped up a batch of this amazing peanut butter coconut sauce from Reagan at The Professional Palate.  That evening we had a family dinner and Big Tex’s favorite vanilla cake, this time topped with not only whipped cream and berries, but also with cream cheese frosting! {Another b-day request} Not that he’s counting calories, but good thing the next day included LOTS of jumping and running around at his party at Flip Force.  I did not do any jumping, hence the importance of my 6 mile lagoon hike 🙂

  3. I love this time of year! I have my orange poppies growing in my yard! That’s when you know it’s Spring in CA!!

  12. you never cease to amaze me with the variety/newness in your menus EA. I do maybe 1-2 new per week. Cooking from It’s All Good this week, so far it is “good”. I am going to look at that pasta recipe as we too have zucchini from the CSA basket (and oranges, thought of your orange trees). Thanks for the inspiration.
