Weekly Meal Plan march 31, 2014 // The Spicy RDAfter a week off from meal planning, I’m excited for this weeks deliciousness, in my latest weekly meal plan! This Mad Greek Quinoa Dinner Omelet with Feta and Tzatziki looks amazing for Meatless Monday, plus don’t you love the name??? You can never go wrong with Chicken Tortilla Soup, so I’m excited to try out this recipe in my slow cooker for an easy make ahead meal.  Samosa Patties? I spied these at the last Recipe ReDux round-up-yum! Plus I’ve got two easy veggie dishes, Pesto Broccoli and Roasted Balsamic Asparagus w/ Goat Cheese & Toasted Walnuts, to round-out two simple family favorite meals~Spaghetti w/ Meat Sauce, and Grilled Steak w/ Potatoes.  Who’s joining me???

My Happy Things…

Berry Lemonade + a Lunch Date w/ my DaughterLOVE that Miss SiSi asked me for a mother-daughter lunch date this weekend!  We had lunch on the patio at Piatti’s in La Jolla, Ravioli w/ Tomato Sauce and this Berry Lemonade for her, and Warm Salmon and Lentil Salad plus a Cucumber Basil Spritzer for me. We talked about the latest and greatest movies coming out this year, what’s happening at school, and, shhh…don’t tell Mr. Spicy, but the topic of cute boys might have come up as well 🙂 Ahhhh….to be 12 again!!!

TextSpeaking of my 12 year old daughter, this is the text she sent me when I asked her what she wanted from the grocery store.  Not sure if it’s a happy thing {maybe if more fruits and veggies had been on her list!} but I thought it was pretty funny, and for those of you who think dietitians’ kids are super healthy eaters all the time…Well, maybe not so much, but at least she asked for avocados 🙂

Exercise + Fun + Friendship = Tennis!SO excited to play tennis again last week after a 2 month hiatus. When was the last time you played? Grab a friend, or 3, and just do it!!!
