Happy Friday! Happy June 1! Somehow I was in a panic earlier today when I started thinking we were already halfway through the year. I even posted it on Facebook... Happy June 1!!! It's hard for me to believe, but it's already time for another Recipe Redux Post! August {and the whole summer for that matter!} has flown by! Today, Ian, SiSi, Big Tex and I are headed to the "Happiest Place on Earth". Disneyland! We're hoping to beat the crowds before everyone in Southern California gets out of school for summer break. French Toast with Pecans, Coconut, and Orange Sauce and, a Tale of Two Mornings…

This is a tale of two mornings.  One relaxing, the other, so NOT relaxing, but still fun, nevertheless. Last Saturday morning was the "calm before the storm".  It was time for a slow, leisurely breakfast with my family. With my favorite coffee cup in hand, and a little Dave Brubeck playing in the background, I cooked up a batch of my favorite orange sauce, then made some french toast and topped it all off with toasted pecans and coconut.  I  sat down at the kitchen island with my husband and children to eat and enjoy... Coconut Flour Pancakes with Pecans and Raspberries {Regular or Gluten Free}

Pancakes are a staple in our household at least one morning each weekend.  Usually I use Bob's Red Mill Gluten Free Pancake Mix as my "go to" recipe.  I really like it and my non-gluten free husband and kids like it too.  Sometimes we make the pancakes plain, but often we add pumpkin puree and cinnamon to the mix {Kids love to add chocolate chips too!}.
