Vanilla Birthday Cake {Gluten-Free} with Fresh Strawberries and Whipped Cream

Yesterday was Big Tex's 8th birthday, so, naturally, we celebrated with a special cake. It was "vanilla" per his request. It was "gluten-free" per my request.
